Kind of offputting to see a westerner going to basically a third world country, getting AMAZING regional food at a really good price, and then seeming to count his pennies and make judgements on costs etc when we know he has it far worse at home (and at a diminished quality).
At Perú we have even bigger ones, actually the small kinds of corn is not common here (they are available but is not our favorite) and the one at the video is the average sized.
ohh there are lots of hidden golden places out there, is better to ask locals. Usually wel known "touristic" places are overpriced. This one in the video is kinda expensive too but looks good. Wont be a daily meal but having it once in a while seems nice

Corn! In Peru they have variants of corn with HUGE kernals. If you google Peruvian Choclo it'll show you pics of the same stuff. I was wondering about the side myself so I went on a google hunt to figure it out
That's a Ceviche Mixto (fish & seafood). Lenguado is Flounder. White fish's prefered as the flavor's more delicate. Was there no Camote (sweet potato)? The complete Guarnición must have sweet corn, sweet potato and cancha serrana (toasted corn, not popcorn, mind you).
There is and should be a tax in developing markets for foreign tourists. I don't care if Western tourists pay a premium to steal a table from a local. I care that the restaurant makes enough to stay open, and I hope they offset to make locals able to afford food and the same experience. A wilder question would be "should NYC restaurants overcharge the crazy rich Asians/Euros/Whoever descending upon NYC?" That's much less clear, because you can argue they already cater to the super rich.
If you ever find yourself in the Dominican Republic, there is a Seafood restaurant in Santo Domingo that is a must try, they serve the best Ceviche i've ever had by far, as well as amazing grilled fish and lots more. Muelle 47
Joe Simes Peru is seriously one of the best country I have visited. Been there for 1 month. Best food in South America is from Peru. Lots of very famous restaurants and chefs are from Peru. So you should definitely go!
