I think the reason why your first bowline doesn´t work is because you are doing it wrong. the end needs to be showing to the other end, not to the bow.
Harry instead of a "stopper knot" use the figure of 8 knot in water it stays nice and tight and easy to undo. Try all your knots on poles no cheating allowed 😆
