I made meatballs and sauce for my first time using insta pot. Meat comes out so moist and tender like it had been cooked all day on the stove!!! I bet your meatloaf tastes just as wonderful!!! I just love an Insta pot now!!! Thanks for great recipe! My mouth is drooling 😳
Meatloaf is my ultimate comfort food along with mashed potatoes!!! My recipe is just as easy as yours but I still get my friends asking me to make them a meatloaf cause theirs doesn't come out as good as mine. I also love leftover meatloaf sandwiches!! OMGoodness now I want meatloaf!!!! They also love my beef enchiladas. I use a Chuck roast instead of ground beef for mine. At the moment I don't have an instapot but I still like watching!!
When I make this I use whole red potatoes so they don’t overcook. I add only a cup of water, no oil. After it cooks 20 minutes, I drain the water off the potatoes before adding butter, etc. for mashing.

YUM! I haven't tried meatloaf yet in my IP, and I'm always looking for uses for my springform pan, so this one is perfect Catherine! I am really surprised that the potatoes did so well at 30 minutes on high pressure, they came out great and it all looks delicious :) A definite keeper, can't wait to try this one in the fall and winter when I start buying potatoes more often (still hanging on to summer produce a wee bit longer, LOL!) and we are craving comfort food :) Have a wonderful and blessed day ---Stacy 😍❤
I think the trick was definitely using the red potatoes for that amount of time. But they were delicious. I kinda eat anything at any season. 😂 except thanksgiving dishes, now those I only eat at thanksgiving. But I’ll make and eat soups all through the summer. 😊❤️
Question. I don’t like tomato based sauce on my meatloaf and when it’s 100 degrees outside, I’m not a fan of turning on the oven even for 10 min. Do you think a brown gravy cooked on top of the meatloaf while it’s in the instant pot will still have good results? Or is there any way to avoid the oven at all for this since that technically defeats the idea of it being a “1 pot meal”?
Catherine's Plate It’s sorta like a Salisbury steak, but so much better. I also use stove top in my meatloaf instead of bread crumbs. It’s really yummy.

You didn’t say why you wrap it in foil. Why not just put the pan in. I don’t see that it has any value. Sure looks good though.
