  • The Turkish pepper paste, also known as Salça or Biber Salçası, is the core ingredient of any traditional Turkish dish and it is the secret behind why Turkish food is so tasty. Salça can be made with tomatoes too, in which case it is called Domates Salçası.
    How pepper paste is made is a question many of us ponder on. Making pepper paste is not an easy process as it takes plenty of time and effort. Harvesting fresh peppers (hot or mild) directly from the farm, and then grinding them until it has a consistency of a thin paste is the first part of this very time consuming process. The second part consists of leaving this paste under the sun for a few days to weeks until the paste gets a thick consistency and is dried up. Pepper paste is then transferred to a large clay pot to be preserved and used in the winter.
