Whenever cutting your flash seared fish, try not to cut in a sawing motion! It will make your fish fall apart more. Try to cut it in 1-2 long and swift cuts! Keep the cooking videos coming, they’re my faves.

I just have 2 recommendations for the future. Crispy Whole Fried Sea Bass, and DouBan Yu or Fermented broad bean paste fish. Buy some Dou Ban Jiang and bring it over to Szechuan!

Maybe one time you could do a Caribbean jerk style recipe or stewed curry fish? Think those would go well with a firmer fish like wahoo. There is also a nice style Lebanese whole fish recipe with cilantro and spices that is baked in the oven.

Bro, you really need to try grilling the fish collars, aka throat. Wahoo, tuna, false albi's, and even snapper, make excellent appetizers when grilled. It is some of the best meat on the fish.
