Too cute!!! Glad to see you back visiting with us. I have missed all of you but I do remember raising children being a full time job in itself. Most of the homesteading vlogs have lost touch with what “REAL” homesteading is and trust me it isn’t building a project with new lumber or kits every week nor is it buying animals that you’ve flown cross-country. It’s a very hard but satisfying life that takes time energy AND resources that sometimes are hard to come by when you most need it. THAT is why I have missed you, because you show the real in homesteading...good bad and indifferent. I also NEED the “real” right now with how upside down everything has become. So don’t leave us again if you can at all help it, I’ll pray God will help you make life a little easier on the hard days and I’ll be here watching as you share life at Teal House Farm!!!:):):)

Having the time and money to just knock out a big project would be amazing, but that's not our life right now! We do the best with what we have and try to be good stewards with what we've been given. You have a very beautiful family!! Thank you for sharing! I've been looking for a tea recipe using wild blackberry leaves since i have so many in my yard. I dont have a dehydrator though, is there another drying method I could use? Also do you tighten the lids on the jars during the fermenting process? My fresh herbs always mold when I put them in a jar. ❤
Thank you! I do tighten the lids securely when fermenting. If you don’t have a dehydrator you can use a cookie sheet with a cookie cooling rack on top in your oven. You lay the leaves in the cookie rack (the sheet is there underneath to prevent them from falling through to the oven coils and starting a mini fire!). Put the oven on 200. I’m not sure of the timing for blackberry leaves, but I’d start checking them every quarter hour after 2 hrs until they are fully dried. Happy tea making :-)
What a great video! Whats the flavor and scent like? I followed another video here on youtube and have my leaves sun drying now, but the other video had the presence of mold whereas my jars were packed very tightly during fermentation and did not mold. Coming out of the jar they smelled slightly of olives. It's a sour, slightly metallic scent. It had me concerned for a moment, but I think with fermenting that'd be a good sign, no? Also, as I unpacked my jars and the scent got on my hands, I got bold and took a whiff up close to verify it wasn't going to be disgusting tea. Up close, the smell takes on a more earthy, almost raisin-like quality in scent. I'm not a fan of raisins, but that's a MUCH more promising sign and fingers crossed I didn't spend a month or two making something that'll get me sick! I'm just curious, since you have more experience, if this matches up to how yours comes out at all or if you have any tips about things I should be concerned about. Thanks to you and yours from Washington!
This has a fruity flavor and smells like blackberries. I only ferment for a few days, so I never have had a problem with mold. Also using the Dehydrator makes it faster so you’re less likely to have a mold problem

How to prevent mold inside the jars while fermenting?especially in humid weather...
I have not had mold issues, but I only ferment for a few days and keep it in the kitchen where the AC keeps humidity down

I once read that if a homesteader doesn't learn a new skill every day then you're already 2 days behind. ALWAYS something to learn!

hello. At what temperature is fermentation carried out?
The leaves just sat out at room temperature in the jars. No need for temperature monitoring

What happens if I was to pick the older leaves and use?
Mostly just really scratched up hands! The taste gets a little bit more bitter with the bigger leaves, but not awful.
why do you cut the stems off?
I feel it makes the tea more bitter

I wish I knew you needed to have a dehydrator. Don't have one so... oh well.
You can dehydrate in your oven. Put your oven on the lowest setting (probably 180 F) and lay the leaves out on a cookie sheet. Check after an hour
