You did what I was thinking... Hang the point down instead of the flat! PBC says to do it the other way. Next weekend is my first brisket... I'm thinking I'll follow your lead!

Try flipping it every hour when hanging it. Spray it when ya flip it. That meat was dried out!

How did you get "Whammer Hammer" cleared?

This video was so great but you should’ve kept it wrapped and rested it for an hour and a half would’ve been so much better for you guys
Doesn't the flat cook too fast (dry out) since it's so close to the coals. Seems like the flat would get done so much quicker than the point.
what was your total cook time? and how big was the brisket?
What type of camera was used
Looked dry and tough dang
Put wood chunks under coals
