    Cooking store-bought ingredients out in the wilderness just hits differently. Its not just cooking the food,youre adding in the atmosphere also. It doesnt have to be some small critter you hunt or ingredients you find in the wild. Simple pasta or risotto made on an open fire in the middle of the wild its just amazing

    What you might want to consider, is freezing fresh basil leaves, to rupture the cells in the basil leaves. Add the basil leaves to the sauce, along with pecorino Romno imported goat's milk cheese, into the sauce. And add garlic. Not diced garlic, but slivers of garlic. It really tastes different. Let it simmer, until it smells fantastic. Remember that there is no such thing as too much fresh basil, or too much garlic.

    Here is my go-to camping dinner.
    Ingredients:
    1. Smoked beef sausage
    2. Half a medium onion sliced
    3. Pablano pepper seeded & sliced
    4. Two cloves of garlic smashed
    5. 16oz can beef broth
    6. 3/4 to 1 cup minute rice
    7. Water enough to insure rice will cook
    8. Seasons you like (I use salt pepper and cumin)
    9. Olive oil to keep from sticking.
    10. Tortillas
    Jalapenos are optional.
    Heat the pan then add olive oil, throw in onions and peppers, saute for about 5 to 8 minutes. Add sausage and garlic, stir occasionally till sausage is hot. Add beef broth and seasonings bring to a boil. Add water if needed return to a boil. Add rice and cover, remove from heat and let set for 5 minutes.
    Serve with tortillas and enjoy.
    Ice cold beer 🍺 goes great with this.

    That looks delicious! I've done a version of this before while camping, I sauteed mushrooms, onions, jalapenos, and sliced hot dogs in a pan. Then poured the sauce over it and mix and simmer to let the all the flavors blend with the sauce. I plate the ravioli then scooped the sauce mix over it and finished it with shredded mozzarella.

    Me again...fry the sausage until turns darker, but not burned. Save the pasta water and add o the sausage in pan, to bring up the bits left on the pan surface. Allow the water to reduce down. Take the sauce and put it in the pan and add garlic and other seasonings of your choice, but just a small amount.
    Allow the sauce to simmer and add the ravioli. Also, use some of the hot pasta water to rinse out sauce from the jar, in on the pan.
    Add all ingredients in pan and allow to simmer. Should make it a little better, but you did a good job to start . Cuervo's playing again set an
    atmospheric mood, just right for this desert cooking.

    Things to add to make it better: Fry some sliced onions in the pan before you put in the shrooms. A nice cold bottle of a local beer. Here we have this great local beer called "Red Bird Ale" - a bottle of that would be nice. Other than that, maybe some nice music to listen to while cooking, and a friend to share it with.... That sounds like the perfect night, actually. Laying in your sleeping bag, belly full, maybe a slight buzz from the beer, and a good friend to talk about weird shit with while you look up at the stars. Coyotes howling in the distance. A meteor every now and then. sounds like the perfect night.

    Pro Tip: when your pasta finishes boiling, take half a cup of that water and throw it into the skillet with the mushrooms and sausage. Add in the tomato sauce as well and let it boil for a bit. The starchy salty water will add flavour, thicken the sauce and help it stick to your pasta.

    James, man that meal looked awesome, just a question if may ask, when are you going to put out your version of simple camp meal cookbook ? You have several recipes that you could put in a cookbook, ill buy one. take care, stay healthy an God bless you and your Family always...
    P.s. I would of put in some fresh minced garlic, but that's just me an maybe some grated parmesan cheese...

    As an italian the only advice i’d give on sauce is that a lot of the jarred brands sweeten tomato sauces with sugar, but this isn’t what you’ll want, the subtle sweetness should come from basil. If you are ever looking for sauce, check the ingredients to make sure there is no sugar in it.
    Also if you are ever interested in making your own sauce, you’ll want stewed tomatoes, tomato sauce, and a little tomato paste. You’ll want it to simmer longer than you think you’ll need to, until it browns a little. Add basil, parsley, oregano, and bay leaves for flavor. Onions, olive oil, and garlic too for substance and flavor. Fresh tomatoes are great to use too. Optionally you can add a few red pepper flakes for spice, but only a little. Also any meats you are using you should brown separately and place straight in the sauce as it is stewing, does wonders for the flavor
    Often times we make a giant stew pot and let it cook for many hours on end, sometimes from morning until dinnertime

      we originally planned to bring garlic bread but the recipe started getting too long and cmplicated, especially while cooking at 100 degree temps lol but for sure during cooler weather

    James👍👍 Don't know when you filmed this but it looked semi warm... temperature dropped 30*f+ in half an hour yesterday, woke up to 09* this morning just a ways north of you in NM. Wood stove is roaring in the den and I'm watching you cook a killer meal outside on the Firebox stove...crazy how a few miles can make a difference. Well that looked like a delicious meal, the only problem I saw was me not being there🤨... Nice one bro, See ya soon.

    Thanks for the video. I just came home from work, hungy and tired... thank you so much friend! James gits ravioli... I got's none!!! Okay... I do have a hack that you could have used to make that dish even better. It's not about what you used...it's about how you cooked it. Now, you say you're not a big fan of Italian foods... I'm thinking, maybe you are talking about pasta dishes.... because the Italian couzin is about so much more. But let's talk about pastas in general. Have you ever made so much pasta... spaghetti, macaroni, etc, that you had leftovers that you refrigerated and microwaved the next day? Don't tell me that you would not agree that the second day pasta wasn't even better than the meal you are after cooking. Here is why.... while the leftovers settle , those flavors from the meats and sauces get deeply embedded into the pasta doughs. Call it infusion. Second day pasta is always better. Okay... so how do we get that same flavor into the pasta on the day we cook it? Fry the cause into the pasta. If you had mixed everything together into the cast iron skillet, then fry it and let it dry up to a point where you almost consider it all burnt... OMG!... the flavors would have changed so dramatically and yummy yummy good. Frying any pasta at the end is so different. Just something I learned from my Italian landlady several years ago. You should try it. Thanks bro... peace out.

    I always miss yellow, purple, or white onions in a meal. This would be inhanced by rings of sliced ones.

    A few suggestions on how to kick this up a notch...
    First, swap out the cast iron skillet for stainless steel (I know that sounds like sacrilege but you'll see why). Heat up your sautéed meats and veggies in the skillet as before, but when they're done, pour the sauce in the skillet and heat it up and let those flavors all blend. Some paprika will go great with spicy and smoky foods - I'd add that with the seasonings, and some rosemary and/or marjoram would be a nice touch as well. You'll get mixed advice on cooking something as acidic as tomato sauce in cast iron, but even if you don't think you'll harm the skillet, the cleanup on it SUCKS. The stainless steel is MUCH easier to clean here (not to mention several pounds lighter!) - one of the rare cases where cast iron isn't better. Once the pasta is cooked, then put that in the skillet long enough to blend everything together, and then add cheese. I'd easily add 5 times as much cheese as you did - no skimping in the woods! As for what kind, mozzarella is the traditional choice and while it melts perfectly, it's a touch bland for my taste so I'd add in large quantities of parmesan and of course asiago.
    Italians would typically serve with wine, but that's a bit tricky in the woods so serve it with some rum. The sweetness in the rum will contrast well with the spiciness of the pasta.

      oh man that sounds great! and yeah, we had to hike a rough sand hill for a quarter mile thats rough, so a lightweight pan wouldve been better but i dont have any

    If I may suggest, and please don't take it as a moan, olive oil, especially the extra virgin, is not for cooking, it's for salads, it has a low burn point, a good cooking oil is sunflower, veg, any almond oil, other than that, spot on 💪👏👏👏👏

    something that would take that meal to the next level is leave off that jar sauce and fire roast some tomatoes. They are plenty hardy enough to be trail worthy. fire roast them then chop them up into the mushroom and sausage mixture. Finally combining the cooked pasta and let the flavors mix over a low heat fire. Myself the flavor of cayenne is all wrong here. I would go with tobasco sauce or sriracha.
