Great video! Next time James, you might consider cutting the head off and cut the body into two pieces and use a flat rock. It will be easier to manage. By cooking it on a flat rock you might even stuff the inside with some green onions, etc and then tie them shut with some twine. It might be interesting to sandwich it on spit sticks and cook it just above the coals on forked sticks.

It is good to see that you find carp ok to eat. I have never tried it but some chefs in NSW, Australia consider it an OK fish to eat and as you pointed out carp have a lot of bones and it might be somewhat bland and so needs some spices as you point out. I have never tasted carp myself. I someone in San Diego say that carp is killing the local native fish. The same thing is happening in rivers in NSW, Australia where the carp are muddying the river waters and causing damage to the river system and the native fish stocks are dwindling. An industry exists utilising this carp to make a fish fertiliser, "Charlie Carp", is the leading fish fertiliser in Australia and I use it as a fertiliser in my garden. The rivers in my state of Western Australia don't have carp as far as I know, but given the chance I would definitely try it. In Chinese culture serving carp is a symbol of prosperity and it is customary to serve the whole fish last at banquets

in Indonesia, carp's head is considered a delicacy. It really delicious with "gulai" soup (like curry but without curry leaf). Really good stuff. And fried catfish is staple in here. Very delicious if you marinate it with water and generous amount of salt.

we in Germany eat a lot of carp, i´m a carpangler myself.
In a pool or some muddy pond, these fish taste muddy, but catch them in a river, they taste clean most of the time.
if you want to get rid of the muddy taste, just "water" them.
you put them in a clean water barrel or watever, alive!
let them swim for one or two days and they don´t taste that muddy anymore.
we eat them mostly with a breadcrumb coating and fried in a pan or deep fry it.

      @@JunkyardFox Hi,
just take the scales of and clean everything out like you did.
we have mirror carps here, they only have a few scales on the body, yours looked more like a wild carp or a common carp.
you can filet it or just quarter it, salt and pepper, swipe it through flour, then mixed up egg and then breadcrumps and just frie it up
      Best wishes Robert

I've had carp a few times, mixed and cooked in a baked pie dish with potato, sour cream and onion (good) and smoked... not as good but ok, never tried roasting it lol. You know for cleaning heavy skinned and scaled critters I have often thought of buying a pair of EMT shears, a good pair goes for less than 10 bucks and they cut about anything and are pretty light weight.

Carp is often misjudged about their taste by the water they're found in, I'm told. In northern Utah, if they're caught from a clear lake or stream you've got a yummy meal. I've only eaten them and not caught them. My boys love catching them. Pretty good. The bigger the better, as far as bones go. Less likely to swallow bones from a large carp.

I've been hunting carp since I was a teenager because they're a non game species in Texas so I'm able to legally pole spear them underwater. The only downside to Carp is that pesky extra set of ribs that are difficult to eat around without getting tiny bones in your mouth. I want to experiment with pressure cooking them to see if I can simply cook it whole, softening the bones. Anyone else have experience pressure cooking a whole fish?

    • @JunkyardFox
