    MUGHLAI PARATHA
    Preparation time 10-15 minutes
    Cooking time 20-25 minutes
    Serve 2-4
    Ingredients
    For Ginger Garlic Paste
    2 Green chillies, broken into half (less spicy), हरी मिर्च
    ½ inch Ginger, अदरक
    Salt to taste, नमक स्वादअनुसार
    For Marination
    500 gms Mutton kheema, मटन खीमा
    ½ cup Curd, beaten, दही
    Prepared Ginger Garlic Paste, अदरक लहसुन का पेस्ट
    1 ½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
    1 tsp Coriander powder, धनिया पाउडर
    ½ tsp Turmeric powder, हल्दी पाउडर
    1 tbsp Tender Coriander stems, finely chopped, धनिया के डंठल
    For Cooking Kheema
    2-4 tbsp Oil, तेल
    Marinated Kheema, मैरीनेट किया हुआ मटन खीमा
    2 Green cardamom, हरी इलायची
    2-3 Cloves, लॉन्ग
    2-4 Black peppercorns, काली मिर्च के दाने
    1 Black cardamom, बड़ी इलायची
    ½ tbsp fresh Mint leaves, finely chopped, पुदीने के पत्ते
    150 gms Mutton bones, मटन की हड्डियाँ
    1 cup Water, पानी
    For Dough
    1 ½ cup Refined flour, मैदा
    Salt to taste, नमक स्वादअनुसार
    1 ½ tsp Powdered sugar, पिसी चीनी
    1 tsp Oil, तेल
    Water as required , पानी
    2 tsp Oil (after kneading) तेल
    For Kheema & Egg Mixture
    1 tbsp Coriander leaves, finely chopped, धनिया पत्ता
    2 Green chillies, finely chopped, हरी मिर्च
    ½ inch Ginger, peeled, finely chopped, अदरक
    ½ medium size Tomato, finely chopped, टमाटर
    ½ medium size Onion, chopped, प्याज
    ⅓ cup Prepared Kheema, तैयार किया हुआ खीमा
    2 Egg, अंडे
    ½ tsp Prepared Masala, तैयार किया हुआ मसाला
    For Frying
    Oil for shallow fry, तेल
    For Masala
    1 tsp Degi red chili powder,देगी लाल मिर्च पाउडर
    ½ tsp Dry mango powder, अमचूर पाउडर
    ¼ tsp Garam masala, गरम मसाले
    Salt to taste, नमक स्वादअनुसार
    For Garnish
    Coriander sprig, धनिया पत्ता
    Lemon wedge, नींबू की फांक
    Process
    For Ginger Green Chili Paste
    In a mortar pestle, add green chillies, ginger and salt to taste.
    And make a coarse paste and keep it aside for further use.
    For Marination
    In a bowl, add mutton kheema, curd, ginger green chili paste, degi red chili powder, coriander powder, turmeric powder, tender coriander stems and mix everything properly.
    Keep it aside for further use.
    For Cooking Kheema
    In a pressure cooker, add oil once it gets hot, add marinated kheema, green cardamom, cloves, black peppercorns, black cardamom and saute them nicely.
    Now, add mint leaves and saute well. add mutton bones and saute them nicely.
    Add water and cover it with the lid and cook until 2 to 4 whistles.
    Open the lid and saute the kheema well. Once water reduces, switch off the flame.
    For Dough
    In a mixing bowl, add refined flour, salt to taste, powder sugar, oil, and mix well, add little by little water and make soft to medium dough.
    Apply oil over the dough and keep it aside for 10-12 minutes.
    Once the dough rested well, cut the dough in lemon size balls and place into the tray and keep it aside for further use.
    For Kheema and Egg Mixture
    In a bowl, add coriander leaves, green chilies, ginger, tomato, onion, prepared kheema, eggs, prepared masala and mix everything well. Keep it aside for further use.
    For Frying
    Take a shallow pan, add oil on moderate heat.
    Make thin sheets of the dough, place the prepared egg kheema mixture, folded like a pocket and cut the edges.
    Prepare paratha place into the hot oil and fry till the golden brown color into it.
    For Masala
    In a small plate, add degi red chili powder, dry mango powder, garam masala, salt to taste and mix well. Keep it aside for further use.
    For Garnish
    In serving plate, place prepared paratha cut into half, garnish with coriander sprig, tomato ketchup, green chutney and onion rings
    Serve hot.

    Kuch points:
    1) Kolkata Cabins iske sath "Aloor Tarkari" serve karte hain, with Ketchup aur salad. Cabins me abhi bhi Haddi nikla hua Chicken cutlet, Kabiraji cutlet, mutton cutlet, "Kassa mangso" with paratha, fish fry with mustard sauce (kasundi) milta hai.
    2) You are fabulous. I love to watch you talking about the history of the food and many more funny things on your shows
    3) how do you flip the paratha by your hand right after pulling it from boiling oil?? Us hatho se kisi ko thappad mat mariyega, Paji😔

    in my country Singapore it is called murtabak and serve with ketchup wali cucumber. and gravy (chicken curry, dacha, fish curry anything) a and the way they make roti thin its fun to watch .

    I am from Burdwan...never knew that mughlai paratha was first invented here..thanks for sharing....One thing I would like to share.. in burdwan mughlai paratha is served with matar ki ghugni... In kolkata they serve with aloo ki sabji... Ghugni wala combination tastes better to me... 🤩

    "Moglai Porota" is part of Bengali culture. Be it Kolkata or small towns and cities we find it in all bengali fast food joints.
    Popular side dish with moglai porota is the special dry aloo sabji.

    Makes me nostalgic,have grown up eating "moglai parota"(as we bengalis call it) from nukkarwali shops as well as from Basanto Cabin during college days...even today when we visit my city ,this item always remains at the top of our must eat list.Thanks a lot chef❤️

      Basking in their past glory. Forget about the shop outlook, the main thing, "taste" is gone forever. Just another oil dripping no taste over hyped and unhygienic place, the old owners are just minting money with their past..

    Thank you so much chef, for rekindling my nostalgia. "Moghlai Porotha" brings out so many fond memories from my college days. Back then, I used travel Shyambazar (A busy Northern neighborhood in Kolkata) for my tuition classes. Our Sir used to take 3 hour long sessions, hence, by the end of the class we'd be left starving. So, me & bestie rushed to this cabin (near Gol-Bari, Shyambazar) for feeding our hungry souls. "Moghlai Porotha" were our usuals, apart from occasional 'egg chicken kathi rolls' or 'chicken chowmein'. They used serve the porotha with Aloo'r torkari (usual potato curry), kasundi (bengali mustard sauce), ketchup, salad (assortment of julienned cucumbers, beetroot, onions, carrots). We used to sit on those tiny roadside benches, and devour every crumb of it. Life was simple back then.

    Namaste Sir, I appreciate your efforts in bringing up this video. You are absolutely correct because once I had Mughlai Porota in road side dhaba in Kolkata and asking the owner who was cooking it he replied that it should have Vanaspati to add to the taste. Cabin Restaurants and Pice Restaurants are always my favourites. Normally, Moglai Porota in Kolkata is served with Simple Alur Torkari. Simple Totato Curry, which is not thick and not running. Thank you.

    Seeing this and remembering Basanta Cabin, Friends Cabin and especially Anaadi Cabin at Esplanade, Kolkata where they make mughlai paratha (Or as we call it just 'Mughlai') with duck eggs and you can have them with dark brown coloured mutton kosha..... Oh such lovely memories...... Thank you Chef for bringing such 'non-veg' blessings with a shower of nostalgia to our weekends!

    Cheff you always have that love in your eyes whenever you talk about Kolkata and it’s food history… and seriously I have stayed in many state and cities and none of cities has this cabin food culture like cutlets, fries, moghlai porota etc… u will only get this in Kolkata…. Such a lovely place for food isn’t it?

      bro kolkata food is nothing infront of our Hyderabad the styles u wrote is already available here and came to Hyderabad much more before than kolkata haven't u read food history of hyd??u come to our Hyderabad i will show u original mughlai cuisine kolkata only copied and added some twist in it ask anyone whose biryani more famous kolkata or Hyderabadi??only hyd

      @@HasanFaraz93 Hyderabadi cuisines are THEMSELVES a copy of Awadhi cuisines. And no, Kolkata cuisines aren't hyderabadi copy, it's just that both Hyderabad & Kolkata copied recipes from Awadh. And fyki south is known only for dosa idli Vada and only 2 biryani types, the hyderabadi & the coorg. There is no variety of famous food like North Indian. While you have 5 varieties of famous dishes North has 15-20, even 25 including snack types.

    It is really popular in Dhaka, Bangladesh too. Although ingridients vary here. We mainly use eggs, onions and green chili as stuffing. Some restaurants use semolina too. As an old Dhakaiya, I absolutely love it. I have very fond memories of the dish. I have been your regular viewer for quite a long time. Take love. Hope that you will visit our country one day. 🇧🇩

    Now Moglai Parota is abundantly available as a street food of Kolkata especially at the Lunch hour in the office areas. While watching the dough making of Moglai Parota I saw a a street chef adding eggs in the dough. After asking the reason behind it, he replied it helps hand stretching the dough to the thinness of a paper. Can it be true?

    Have a Question: can we use whole wheat flour for the paratha? Or perhaps mix the two flours. Thanks

      wheat flour is avoidable because the soft crunchiness is a part mughlai paratha which comes with flour. the mid portion of paratha will be soft and the side portion will be crunchy and the taste will be amazing because of flour

    Thank you Ranveer to remind me one of my hometown delicacy when I am far away from Kolkata. Just one point, in most of the Kolkata cabin restaurants serve this paratha with aloo sabji and salad (onion, carrot, cucumber and beet root).

    Shukriya Janab Chef Sahab. Bahut kuchh sikhaya aapne wo bhi itni bariki aur shiddat se ki koi bhi recipe banani hoti hai to sab se pahle aapka videos dekhta hoon.
    Bihari Recipes ko bahut expose nahi mila hai siwa लिट्टी चोखा aur aabhi k time pe चंपारण मटन .
    और भी बहुत सारे जबरदस्त नुस्खे हैं जैसे America तक में अपने स्वाद का जादू बिखेरने वाले बिहारी कबाब और बिहारी बोटी। वो भी सीखा ही दीजिए.
