I just made this cheese, it's in the fridge firming up right now. I snuck a little taste from my mixing spoon and it's sooooooo good! I love you so much for this recipe! I'm in tears of joy because I LOVEEEEEE cheese and it was so hard to give up, but this vegan cheese is poppin!
As some people have noted, the end result is too close to a jello consistency once refrigerated, but it's wonderful when kept warm/hot like fondue or queso. I tweaked the recipe slightly and added 1/2 of a bell pepper instead of 1/4 and some chipotle to increase the heat. Great recipe, Rose.
My ingredients finally came in & I just made this cheese. It was mad tasty before I even put it in to the bowl to set. Thank you for this. I'm already trying to think of other ways to tweak it to my liking even more. ♡
I made this cheese but I had to do a few changes and it worked. Instead of miso paste I use SunButter and instead of agar agar I used cornstarch. And after I blended everything I heated up the mixture all of it and then I put it in the fridge and it solidified that is the only difference you have to do if you are not using agar agar and miso paste
I just made this. I didn't have enough agar (realised half way through making it) so I don't think it's going to set properly but the flavour was so good. It really has that strong cheesy funk. My daughter loves vegan cheese but I don't like the amount of oil in the supermarket version, or the amount of plastic packaging. I can tell this is going to become a staple in our house! I didn't have miso but happened to have korean soybean paste (doenjang) on hand and so used that. I also used smoked paprika in place of bell pepper.

Regular cheese last a pretty long time, so i am wondering how long does vegan cheese last seeing that it's plant based. I'm loving this healthy journey im on.

I’ve never used agar agar powder for making cheese. I put whatever mixture I have on the stove with a few tablespoons of tapioca starch and stir constantly on low heat until it forms a ball. It firms it up pretty well and still melts.

Pietro Di Noto Hi Pietro. I recommend 4-6 tablespoons for about two cups of cheese base. Make sure to combine the tapioca starch with the cheese base before you began to heat it up. That will keep from forming translucent tapioca glops in the process. :)

My lazy self found out that you can just add the agar agar into the mix from the beginning and blend it all up together. Just use warm water and milk and as you keep blending, things heat up anyways. To me, that's a major time and cleaning saver.

Can I use that in the place of Agar Agar? Also I see some recipes using tapioca starch, potato starch or all those plus the Agar agar stuff.. Ahhh this looks so good!! And it's super helpful.. Mainly because I'm not vegan (It's just that a lot of these recipes are healthier and there's actually a lot of variety)... But I can't have milk. Milk protein, to be exact. And I like what I can get from the store enough, but.. It kinda tastes like plastic, and it really doesn't melt at all. I have a feeling this may give me better results, while also helping with some of the milk issues! ❤️

Miso paste is a very halty paste made with soya and something else and same halty japanoce bacteria miso. It has flavour similar like soya sauce, not the same, but kind of. So, for flavor, you can use soya sauce.
I made these and they taste beautiful! But I thought the texture was a bit too gelatinous, is there a way to fix that for the next time I make this? Should I add more agar agar?
Just made this recipe yesterday... Two questions. 1. Is there any reason you can't just add the agar powder straight to the blender? It seemed like the extra liquid watered down the flavor a little bit... 2. Is it supposed to have the texture of thick cheese jello? Agar-agar might come from Malaysia origin. They use a lot in their sweet desserts. But this recipe does it melt when heat? As long I know aga-agar not melting even on higher heat.

agar agar is what makes it gelatinous, so if its too gelatinous i wouldnt add more

Can dairy milk be used instead of plant milk?

Can you use grapeseed oil instead? And something not soy for the miso paste?
+Kelley Guidry skip the miso paste and yes you can use any oil
You could also use chickpea miso.
Chickpea miso has a great flavor but you can also use adzuki bean miso for a more fermented flavor (brand is South River).
And any oil works for these cheeses. Unrefined coconut oil or a light flavor olive oil is what I use for mine.
