Crispy Skin Salmon bought from Loblaws

The Salmon turned out just a bit more cooked that I prefer, but was still quite moist and tasty. Was stumped on what to make with it, as potatoes have been a running theme lately. The rice and guacamole/salad worked really well. And as always the star was Salmon 'bacon', its my favorite thing about cooking salmon, so getting a perfect edge to edge crisp skin is worth the slightly firmer fish and normally i would chastise myself on the albumin but, it happens!
Loblaws is generally bad at making sure the salmon in scaled, that is my experience consistently; i would imagine it would be easier to scale a large side of salmon as opposed to a small piece. The teaspoon works best mainly because of the size of filet, my fish scaler just is too big for a small piece and cause more damage than good.
