I’m a breader at chick-fil-a and this is by far the most accurate representation of Cfa nuggies. His breading (we call it coater), milk/egg wash, and chicken seasoning was 100% accurate. We TOTALLY use MSG in the chicken seasoning AND breading lmaaaaoooo
I also worked at CFA. I can confirm that he is 100% telling the truth. I know he is telling the truth because we definitely call it coater instead of breading. Although most of the chicken comes pre-seasoned nowadays.
If anyone actually wanted to know how it’s made, we get chicken from different brands depending on the day (Tyson’s, Pilgrims Pride, etc) the strips, grilled chicken, and spicy chicken are marinaded in sauces while the regular chicken breasts and nuggets are just plain. You have to actually filet all the chicken breasts by hand unless they’re nuggets which are pre sliced into nugget shapes. No matter the chicken you start by dipping it into a buttermilk followed by a harsh press into a special “coater mix” or as most people say breading. (Spicy chicken gets its own special coater) Once you have the chicken breaded (this only pertains to fried chicken, grilled is different obviously) you put them on racks and into the deep fryer for like 5 mins at 400 degrees (peanut oil is what we use). After that pull it out and let it rest for a minute and you’re done! Spicy chicken gets its own special fryer so that it doesn’t mix with the regular chicken. All the rest of the menu items, from lemonade to salads are made right there in the store, even the cookies.

Used this recipe, and even with a couple subs for ingredients I didn't have (breast in stead of thigh, garlic powder for mushroom powder at 1/4 the volume, smoked paprika in stead of sweet), the nuggets turned out nearly IDENTICAL to Chick Fil A. I'll be doing this repeatedly until I can do it from memory, and impress the everliving hell out of my friends.

The only thing they can beat you in is time...and it's literally the only reason I'll go out anymore because while I can make almost everything cheaper and better at the house, restaurants can throw food on a plate for me and 5 friends in less than 20 minutes. I also cut the recipe in 1/4 and found it was perfect for about 22 pieces of chicken. I don’t like wasting a lot of batter and food, so I didn’t want a ton of leftover throw away food. Try this recipe, you won’t be disappointed.
here is the written recipe :) Chicken nuggets Ingredients you'll need: The cure: 1.5 pounds’ chicken thigh 3 tbsp (32g) kosher 1.5tsp (7g) Monosodium glutamate (MSG) 3/4tsp (2g) sugar The Dredge: 2 cups (295g) all-purpose flour 2 teaspoon (7g) salt 1/2 teaspoon (2g) Monosodium glutamate (MSG) 1 tablespoon (11g) powdered sugar 2 tbsp (21g) garlic powder 2tsp (6g) sweet paprika 1/2 cup (10g) dried porcini mushroom powder 2 eggs 1 cup (235ml) whole milk Chick Fil A Sauce: 5tbsp (88g) mayo 1 clove fresh grated garlic 5tbsp (70g) barbecue sauce 1tbsp (16g) Yellow mustard 1tbsp (16g) Dijon mustard 2 teaspoons (8g) shoyu (smoked shoyu) Salt to taste PROCEDURE The cure: 1. Add the salt, msg, and sugar in a bowl and whisk that together 2. Cut the chicken thigs into bite-size pieces 3. Place the chicken on a tray and generously season it with the salt mixture 4. Then place them in a plastic bag and let sit in the fridge for at least 30 min or overnight for more flavor The Dredge: 1. add the flour, salt, msg, powdered sugar, garlic powder, sweet paprika, porcini mushroom powder and whisk them all together 2. add in a separate bowl the eggs and milk and whisk them together 3. put the chicken in the dry the wet then dry batter again (in bunches) and make sure to press down on the chicken to not have wet spots Frying: 1. take a medium-sized pot, then add three inches of oil or three-quarters full. 2. start heating it at 325f or 160c 3. while preheating mix the mayo, grated garlic, barbecue sauce, yellow mustard, Dijon mustard, shoyu, and salt 4. once reached at the ideal temperature in batches fry them from 3 to 5 min or until nice and crispy
Ok so a few observations I had after making this -The sauce came out awesome and was delicious - The porcini powder turned the breading, when cooked, very dark (no, I don’t burn them) - Overall, the chicken in my opinion was lacking flavor. I think fast food has that flavour that's unable to be recreated, it's almost as if you taste the convenience of it. I think that when cooking at home rather than making/recreating a fast food chain menu item, I'd rather try some other recipes.

made these with an air fryer and they came out perfect. you can even skip a few steps like the egg/milk wash and breading your chicken twice after the cure. 1.5 cups of flour instead of the full 2 is plenty as well

Tried this recipe, & i gotta say it's pretty good. My only "issue" is the sauce isn't as "sweet" as Chic-Fil-a, & that's probably because they use honey mustard in their mix. Other than that no complaints
I worked at Chick-fil-A for the summer in 1996. It's a fast food restaurant that has unfrozen chicken in the back which looks like it came from the grocery store. They bread the chicken and juice actual lemons to make lemonade. They just generally use fresh ingredients (frozen french fries though) and keep everything very clean. For a fast food restaurant that is extraordinary. I worked at McDonalds the next summer and had a VERY different experience.

I made this recently. It turned out great, but I did have one issue with the recipe as written. It feels like the cure volumes could be precise to the amount of chicken. I mistakenly added all the cure to the 1.5 lbs chicken. Later it dawned on me that 3 Tbsp was a crapload of salt for 1.5 lbs of chicken. I rewatched that part of the video and see that only “some” of the cure needed to be used. I salvaged this by adding another lb of chicken and 86ed the rest of the salt in the recipe. It worked out fine, but again, it seems like it would be easy to just write the recipe to use all the cure. Nuggets were great and since I had 2.5 lbs of them, I froze them and that worked great. In fact, if I ever do this again, I’ll certainly double or triple this and freeze the extra!

Use more of the salt-MSG mixture next time, you went too light on it.
I highly recommend marinating your chicken in pickle brine for 3 hours just be sure to pad it with a paper towel before dredging.

Tried this recipe, & i gotta say it's pretty good. My only "issue" is the sauce isn't as "sweet" as Chic-Fil-a, & that's probably because they use honey mustard in their mix. Other than that no complaints

I worked at Chick-fil-A for the summer in 1996. It's a fast food restaurant that has unfrozen chicken in the back which looks like it came from the grocery store. They bread the chicken and juice actual lemons to make lemonade. They just generally use fresh ingredients (frozen french fries though) and keep everything very clean. For a fast food restaurant that is extraordinary. I worked at McDonalds the next summer and had a VERY different experience.

I made this recently. It turned out great, but I did have one issue with the recipe as written. It feels like the cure volumes could be precise to the amount of chicken. I mistakenly added all the cure to the 1.5 lbs chicken. Later it dawned on me that 3 Tbsp was a crapload of salt for 1.5 lbs of chicken. I rewatched that part of the video and see that only “some” of the cure needed to be used. I salvaged this by adding another lb of chicken and 86ed the rest of the salt in the recipe. It worked out fine, but again, it seems like it would be easy to just write the recipe to use all the cure.
Nuggets were great and since I had 2.5 lbs of them, I froze them and that worked great. In fact, if I ever do this again, I’ll certainly double or triple this and freeze the extra!
