I see other videos and pictures or installs between the studs- is there any disadvantage of doing it this way besides it being more labor intensive or more materials being used?
No advantage unless you want to "see" the framing? Installing www.BlueTexInsulation.com on the internal face of the metal framing creates a more solid internal vapor barrier.
