    XIA FAN CAI doesn't mean the dish goes on top of rice it means the rice goes "down" (xia) well because of the salty/spicy accompanying dishes

      Ah, this explains why my crispy intestines at a Hunanese restaurant in Phoenix, USA, was literally blistered in little red devils when I'd asked for "fairly mild." They had the sour element right, too. Not, I'm afraid, my thing, but it was well done and obviously authentic, so far from the home of the cuisine. Still glad I tried it. Well explained, Peter!

    I love China so much... its ancient, rich culture, the many different ethnicities of people, languages, traditions and foods, wherever I went, I've never had a bad experience in my life travelling through the majestic country and I never will. I must have been Asian in a previous life🥰 since my first trip I immediately got accustomed to the spiciness and to the peculiar flavors and foods that people from other countries might frown upon.     Videos with Blondie tells all the western world, there is NO Chinese food in China. There are so many different cuisines. Saying Chinese food is like saying European food which doesn't make sense at all.

      @@christofat2704 Actually, in China, there are 8 major styles of Chinese cuisines, with a lot of sub-styles branching off from these cuisines. So even if China is one country, it still has a lot of variety in its dishes.

      I'm from the bay area in California (particularly Milpitas)
      (a bunch meaning two but feels like a lot to me because I can only think of one restaurant that sells the cuisine from the state of India that my ancestors come from)
      I haven't really eaten much chinese food tbh (though ig part of it is because I'm vegetarian and have, like, no familiarity with chinese languages or chinese cuisine)

    I've been a long time viewer of your channel and watching your videos have been bolstering my Chinese vocabulary skills! Watching this video today felt like virtually traveling back to Hunan! If you have time, I highly recommend you to visit 永州 (Yongzhou), which is another suburban city in Hunan! I also recommend trying out food like 东安子鸡 and 血鸭, which are both Hunan's specialties!

    So neat to see Changsha! My grandmother was born there about 100 years ago-her parents were white Americans, but there for a few years on medical-related work. I’ve heard stories of it at that time, but don’t know much about it now, so seeing the cuisine and the street scenes is a real treat. Thank you!

      Bingo-they were medical missionaries affiliated with Yale! My great-grandfather was in public health.

    Milk actually only helps with spicy food by coating the stomach, it doesn't stop the burn, same with yogurt. Sweet drinks is what helps by swishing it around before swallowing.

    The river snail dish looks really interesting. I’m guessing there are people who have been picking them out of shells for years and can do it incredibly fast. I’m also guessing they don’t get paid enough for how skilled they are.

    I remember eating those river snails on the street in ghangzhou...only after getting back to the states did i think about how polluted the rivers are although farther up river in the mountains the water is very clear.

    The seeds of a pepper isn't what makes peppers so spicy, it's the capcaisin in the ribs or white pith inside the pepper!
