Could you have used just a single piece of threaded rod, a pair of washers, and wing nuts to press the cork? I can't think of a reason why not, but maybe you had one?

I don't want to run the risk of the cork getting stuck to the threaded bar, its alot easier to keep it from sticking to the lubed smooth rod. And plus, this is the conventional cork clamping rig just about everybodys uses ;)

Interesting. I'd be worried I'd tighten one side more than the other, causing the layers to dry a bit skewed.
The problem of sticking to the threaded rod is eliminated with some liberal application of silicone lube/grease. I've used essentially the same technique to build balsa wood plugs to be used as the master shapes in making molds for discus launched glider fuselages (or pods, as they're usually called). There is a downside that the dual-threads solves though - with a single rod you can accidentally allow the layers to twist if you're not paying attention. Easily avoided if you're thinking about it though.
