I know this video is 2yrs old but still valid. I have a new Thermador that had the same issue, not as bad as your polenta issue but needed to clean between the glass. Only thing on mine that is different now is there was no “heat tape” or whatever the tape that broke and all my screws that were all in the same places were a 20 Torx. Thank-you so much for this video, I never would have fiqured this out on my own.
Thanks for showing us this. On newer models, you may not have to remove the 2 side pieces. Just try lifting the glass panel out first. I found that I needed to remove the 3 panels for better cleaning from the frame. As another post said, just find the tab in one corner and bend it straight so the frame comes apart. Set is all on a towel and easily and carefully clean each panel ensuring you put the 2 spacers back, then wrap the frame, insert the tab, bend the tab back in a light tap of a hammer. I found the 4 black hinge screws go in just hand tight. Great video. Total time cleaning each glass included was 30 minutes.
Good instructions thanks. On mine, the side plates discussed at 9:05 don't hold the glass in place but rather seem like cover or trim pieces. Perhaps mine was assembled wrong but the black back cover certainly holds the center glass well.

Scott, excellent info. Here is a new one for you. A guy got mad at his wife, came home and took a hammer to the Thermador double ovens, dishwasher, freezer and the refrigerator. Yep. Beat em up. Now they want us to replace the door panels and the glass and trim. Your video helps me immensely. And yes, patience is important. Plan ahead, have the tools and take your time. Thank you.
This video saved me a $159 service call plus $200 hour labor fee. They said the service tech would take it apart then I would have to clean it, then he would put it back together. It took me 30 minutes to take it apart, an hour and a half to clean it (it was much worse than yours) and a half hour to put it back together. One addition segment would have been helpful as we had three layers of glass on the door and I had to separate the glass from it aluminum frame by bending back a piece of metal which I was worried about it breaking when I bent it. However we were successful in separating the glass and it looks pretty good. Hard to get the glass perfectly clean after a heavy greasing! Thanks for posting this video.

There’s 2 different types of hinge assemblies.
The one in this video from what I can remember sure looks like this one but I was not able to find the latch.
