    I love moon cakes and I do enjoy the type that you are sharing that is the shanghai mooncake, sometimes when you buy it, too much sugar may have been added to make it too sweet

      1 egg yolk, 1/2 Tsp oil and 1/2 Tsp condensed milk
      it works well, you may try 🥰💕

    i want make all yam taro filling. You do this how many pieces Mooncake do i get. 480 gram enough or not. i like yam. Will to sweet or not i like less sweet. i waiting u reply me OK

      🙋🏻‍♀️ Hi John, the pastry would be able to make about 12 Shanghai mooncakes. If all yam filling, 480g not enough. Would need more than 600gram yam.
      For ref 600gram yam, sugar about 135gram. For this recipe, the yam filling is not too sweet. you may adjust to reduce the sugar.
      Fresh yam filling Shanghai mooncake cannot keep for too long as it does not not contain preservatives.

      Hi Janey, 这月饼食谱的馅料是自己炒的所以不耐,如果放室温2-3天。如果放雪柜约1星期, 可以烤热后才吃 😊

    600 gram yam about 1 or 2 yam
    Can i put 3 pieces purple potato for colour. Can put corn oil. Cook this filling can put in fridge. i waiting u reply me OK

      Hi John, 600gm yam would depends the size of yam.
      Yes, 3 pieces of purple sweet potato is alright. You may adjust accordingly, depending if you like the purple color to be lighter or darker purple.
      Ok to go for Corn oil.
      If not use directly, ok to keep in fridge. May put in container by covering the yam paste with clinging paper. For leftover, keep in freezer.

    我想问一下 为什么烤出来过后不但拿不到均匀的颜色 反而拿到裂开的花纹但他又不是裂 请问是什么原因? 是烤不够还是烤太久或者是什么原因?

      Hi Kathryn, 每个烤箱有差异,温度和时间需要调整。你是说蛋液有裂纹吗?可以参考食谱中的蛋液方式,蛋黄+油+炼奶。应该不会裂。
      通常直接刷上蛋液就烘烤会出现裂纹。如果喜欢滑溜溜的烘烤15分钟后,拿出来刷蛋液第二次再烘烤大约10分钟。也可以试调低-10c。烤箱要继续预热/没有关。不然,直接放进才开火,颜色就会不均匀。谢谢😊🙏🏻

    為什麼我靜置30分鐘後的餅皮這麼乾?包陷後餅皮裂口很嚴重,還沒有放進烤箱呢…

      Hi Angeline, 有几个可能性。静置在外太久会导致皮干掉。或者做的时候皮有点干,或者馅料比较干,加上静置太久。谢谢

    How to make Shanghai mooncake recepi. You make this dough is enough for 12 piece. this pastry soft ma. You say 600g yam is enough for 12 piece. sugar 135g but corn oil how many u dint say. i want blend the filling water put how many ml.

    不好意思,想确定一下。第一轮160度15分钟,然后第二轮再10分钟肯定会熟吗? 感觉时间有点短。如果我烤的久一点会怎样吗?我看你切到满漂亮的。我的会碎。 芋泥做好看起来有点干。烤好的又不会干的样子。

      🙋🏻‍♀️ Hi Ying, 是的。不够每个烤箱的温度和时间可能会有所不同,可以根据你平常烘烤西饼的温度。试试看用小和薄的刀切割 🥰
      芋泥煮到不粘锅或不粘手就可以了,凉后它会变的扎实一点点。记得要用保鲜膜包好备用。或收保鲜盒。不然水分会流失。

      第一次烤15分钟后,涂上蛋液。然后再烤大概10分钟,烤第二次要注意了…
      烘烤时间过久,也会导致皮干

      🙋🏻‍♀️ Hi Pei Ying, 要用冷牛油。这个皮食谱不应该是像饼干脆脆的。它的口感会比较偏向黄梨酥的皮,谢谢 😊🙏🏻

    这不算是上海月饼,正确的叫法是苏式月饼,上海高桥月饼应该是鲜猪肉馅的,酥皮也略有不同。
