I used my @meatermade to cook up the perfect steak. Pulling the steak off at 120 degrees, the carry overheat made it to a perfect medium rare.

I see you use avocado oil instead olive oil a lot in your videos - any particular reason??
Avocado oil has a higher burning temperature, so it won't burn when you're searing the meat at high temp.

@@ChristosKokkalis myoglobin. It's protein found in the muscle. If meat is given time to rest, the juice will stay inside the meat. If you cut too quickly, the juice will leak. Your steak will be dry and tasteless.

That's not medium rare. That's not even rare... rare is 125 to 130..
He said carryover heat will make it medium rare
