    Almond butter date smoothie:
    1 1/2 frozen bananas
    2-3 dates
    1 scoop vanilla protein powder
    1/4 cup almond butter
    8oz almond or oat milk
    Overnight oats:
    1 cup rolled oats
    1/2 cup yogurt (I use coconut)
    1-1¼ cup milk (I use almond or oat)
    3 Tbsp chia seeds
    1-2 Tbsp maple syrup
    1 heaping tsp cinnamon
    1/2 tsp cardamom
    Peanut sauce:
    1/2 cup peanut butter (smooth or crunchy)
    2 Tbsp tamari
    2 Tbsp maple syrup
    3 Tbsp lime juice
    1 Tbsp grated ginger
    1 clove garlic
    3-4 Tbsp warm water (thin until desired texture)

    Peanut noodle salad:
    Make peanut sauce above and prepare rice noodles according to instructions. Rinse with cold water after straining until cool. Combine noodles with 1 tsp sesame oil, protein of choice, a handful of chopped cilantro, 3-4 chopped green onions, shredded carrot, and peanut sauce to taste.
    Cherry tomato pasta:
    Make pasta of choice according to instructions. Sauté 2 minced garlic cloves in olive oil on low-medium heat until fragrant. Add 1 pint of halved cherry tomatoes and a pinch of salt. Let soften for 10-15 min while stirring occasionally. Add a 1/2 cup pasta water to pan with your cooked pasta, a drizzle of olive oil, and a handful of basil.
    Peach crisp topping:
    3/4 cup rolled oats
    1/2 cup gluten free 1-to-1 flour (I use Bob's)
    1/4 tsp kosher salt
    1 tsp vanilla
    1 tsp cinnamon
    1/2 cup brown sugar and 1/4 cup coconut sugar
    2 Tbsp coconut oil and 1/3 cup vegan butter melted
    Peach crisp filling:
    5-6 medium peaches
    3 Tbsp lemon juice
    2 Tbsp corn starch
    1 Tbsp sugar
    1 tsp cinnamon
    1/4 tsp salt
    Pour peaches into 9x9" baking dish and cover with topping. Bake at 350 for 30 min and let cool for at least 15 min. Best served with ice cream! Adapted from buildyourbite.com/wprm_print/...

    Love the video Lindsey :) I think I saw you asking on IG about other types of videos we’d be interested in seeing. I didn’t have an idea then, but now i do lol. I think it could be cool to see monthly media roundups. What you’ve been enjoying in terms of music, books, movies, tv, podcasts, etc. Doesn’t need to be full albums or a podcast as a whole, could be singular songs/episodes that caught your attention. All of your videos are winners in my books :)

    Without you and your recipes, I would be living on air fryer meals and pasta with sauce from a jar lol. I 100% needed some inspo! 💞 thank you for sharing as always and making cooking and meal prep look so easy. It always gives me motivation to make some delicious meals

    Would love to see more gluten free meal ideas from you! I'm in the middle of the low-fodmap diet and I've discovered that gluten (and onions and garlic, devastating) is definitely a no-no for me 🥲 but I loooooove cooking and find your what I eat in a weeks super helpful!

    The green onion stalks are sturdy cuz they are harvested later, if it was in spring would have been more frail, I know this from witnessing years of gardening
