They are dead. It's muscle contractions. Happens with lots of different things when you put salt or certain sauces on it while it's fresh and intact. You can do the same thing with fresh frog legs and salt, even if the legs are removed from the rest of the body.

@tnhl77 No, they just taste vaguely fishy. The flavor comes from the spicy sauce you dip them in.
