    This is the second relish recipe that I have learned today never heard of !!!!first one was a radish recipe learned earlier today ✌💗 happiness

      I saw the radish relish too! This is almost like pickle relish. It stays crunchy, and has a sweetness to it. It's so good!!!

    Adding cornstarch to any canning recipe can alter heating thruout the jar during process time.
    Get some clear gel.

    Wow. I was trying to find gardening in NC channels and yours popped up. I've never had squash relish before, and I was raised on a small family farm. I've GOT to try this. Thank you. I'm over 60, and am trying to learn to grow in raised beds, pots, buckets and totes, I realize it's nothing like having acres of room in the ground. Easier but such limited space! I've got my first pressure canner ever, and will be tackling green beans in the morning. Wish me luck because I'll need it. Mom and Granny canned vegetables and fruit outside in a galvanized tub for days on end. I follow a few ppl but they're in Arkansas, California, the UK. Subbing. Have a great day!

      @@BaloosCluesOriginal we use it in everything. Egg salad, tuna salad, chicken salad. It's good in pasta salad or potato salad. I like to eat it with crackers, cheese, and salami.

    Your recipe just said "salt" and I put it in before I listened to your video. I put in regular iodized salt!!!!! Dang....
    Please tell me I can still can this recipe!

      Yes, you can still can it. It might change from bright yellow, to a darker yellow. It's still safe to eat😀

    Rinse and drain the squash mixture, reduces the extra liquid and no need for corn starch.

      Use it just like a pickle relish. I personally can just eat it with roast chicken, daily. It's really delicious!

    Ok I picked up my jar out of the water and the screw part was loose? Is it still ok? I’m brand new to any kind of canning and I tried you small tomato one and it turned out great;)! Also do you have to refrigerate all this? Or can you just leave them out? And when can you eat them? I had a little left over and boy was it good!;) I love your videos and glad I found yah;)

    No water in the brine? I always hear about adding half water half vinegar, so this is surprising to me. I'm not doubting you, just havent heard of it. We're getting so many squab this year that I'm trying to find a good pickling recipe, and your relish looks great.
    I also love pickling cabbage with carrot and bell oepper, probably my favorite thing to pickle.

      There's enough liquid from when the squash cooks down. But I always have the last couple jars with the extra liquid in them. I use those for recipes that need a thinner relish. I hope you try this! It's one of my favorites!

      @@TheBigBlueHouseHomestead Ah, that makes sense, and I definitely.wil be using this recipe, I need to use up these veggies before my kitchen is overrun with squash! I'm getting like 4 a day since they started growing, and just as many cucumbers. I've been giving them away to gas station attendants just to get rid of them lol.

    those jars should be sitting on a towel, that counter if it is granet or marble could break those jars.

    What all do I do to the jars other than boiling them and how long do I boils them. I’m new to this but want to try it

      They need to be in the water bath canner for 10 minutes. Make sure your water is boiling the whole time. Thank you for trying this. You will love it!

    Do not have Celery seed Can I use fresh celery in this recipe instead? I have Celery salt, but have already put the salt in and am concerned Celery salt will make it way too salty. Besides I like the idea of using fresh celery instead.

      I've never used fresh celery, so I wouldn't know how much to add. I would suggest just add a stalk and taste test your batch. 😀

    So you only shred the outside of the squash not the seeds

      The seeds, in the small squash, are fine to shred. Any large seeds just make it chewy.

    A lady I know just have me a can of this she made last week. I’m obsessed!! I really can’t stand squash normally so I didn’t think there was any way I would like it but wow it’s delicious! I eat it by itself 😂
    I do have a question though. I’m super confused about the way she cans it because she doesn’t boil her jars. Like she does everything you did except when it’s done cooking she puts it into the jars and just puts the lids and rings on and she said eventually they make the pop noise that they’ve sealed and the lids go in. She only heats the rings and not the lids.
    Is that safe? She gave me a jar she had made the day before and I opened it and put it in my fridge and haven’t had any issues but I just wonder about is it safe after being on the shelf.

      It's so delicious! Some people will turn the jars over, and seal them like that. As long as the jars are hot, and the contents are super hot, it will seal. It's safe as long as it has a vinegar, or high acid in it.

      It's not meant to be canned in a water bath. It needs vinegar or sugar syrups, like a relish or pickles. You can pressure can it, but it turns mushy. I usually freeze it instead

      I've never used shredded zucchini in mine. I only use it diced. Zucchini can turn mushy faster than yellow squash. Try shredded yellow squash and diced zucchini. It's delicious!

      No. I just drained the liquid off. You can rinse it off too. It's not salty tasting at all.

      No, I do not drain the salt water off. After you add the other ingredients, you can't even taste the salt.
