    Ah, good choices!
To be pedantic these are actually "håndmadder", ie, smørrebrød that can be eaten by hand. They are not as loaded as smørrebrød in restaurants tends to be. In restaurants "smørrebrød" is a full meal and eaten by knife and fork. Håndmadder are the more affordable kind. Still good though, no prob!
If you want to make this for yourself, the food combinations are important. Just as you wouldn't eat mashed potatoes with your soup or put jam on your steak.
An easy smørrebrød to make in your home is "kartoffelmad". It is built with slices of cooked and chilled potatoes (smaller ones are best) on a buttered piece of ryebread. Top with mayonnaise, chopped chives and red onion, lots of freshly ground black pepper. Salt to taste.

Those are unusual smørrebrød. There are rules on how to make them and it takes 2½ years of training to be a "Smørrebrødsjomfru". I have Danish chef training( takes 4 years of mixed school and apprenticeship to become a chef in Denmark, and you will be trained in all disciplines of cooking which here also include making smørrebrød), and made a TON of smørrebrød. I didn't care much for it untill I started making it and appreciated the many flavours, textures and the presentation of it.

snailmessia I don’t agree, there is traditional ways, but no rules of course if you are becoming a smørrebrødsjomfru you have to learn the traditional ways!
Some of my foreign friend actually made some strange combinations that I really liked.

That kind of sandwiches are very popular in Poland to (maybe without shrimps). I didn't even know that such a simple sandwich could be called a national dish. Lol. Scandinavians know how to make business :D

YES! That's exactly what "sky" (the jellied stock reduction) is.

I love roast beef but that danish guy just showed why it should be eaten with knife and fork, I always end up with a huge piece of bread with out toppings. So I hate roast beef in my lunchbox put love it on a plate with cutlery!!

This is not what we are famous for.
These open sandwich are good but thats what ppl are eating at work and cost like 2$ each.
If u want the real deal you need to pay around 20$ each and eat it at a restaurant with a great local beer or snaps.
