    I love ceviche but have never tried to make it. Tried this recipe for the first time last night, it's as good as any ceviche I've ever had at a restaurant... can't wait to show it off to my friends.

    i try this before... with tequila marinate...in jicama tostadas with mango on the top. add i garlic and red onions

    Rick Bayless has been one of my go to guys, ever since I picked up his "Mexican Kitchen" back in the `90s and made his Oaxacan Black Mole... made one hell of a mess, but it was the best damned mole I ever had and I still make it... usually when my bride of 50 years is going to be gone for the day ! Work sent me to Chicago a lot, so I was blessed with numerous opportunities to eat at the Frontera Grill and took advantage. He also had another fancier place to which I took my bride when she could accompany me. It was a bit more formal, but served up his excellent cuisine. Pleased to see this recipe.

      @Richard: yes! I remember that programs! Rick used to go to mercados in different cities in Mexico and he ate there delicious Mexican dishes, then he cooked that plates at his kitchen! Great memories!

    Rick was a brave man to not glove-up for that habanero. Or I guess maybe he's smart enough not to touch his face afterwards, unlike myself 😅. I'd burn the eyeballs out of my sockets a few hours afterwards though, due to contact lenses.

      I did that, fortunately without contact lenses. I was in the cold shower about 20 minutes rinsing my eye.

    I'm always curious when I see you put tomatillos directly in the blender, do you prefer to rinse yours free of the sticky oil or not?

      Exactly, just like sashimi is raw. If you are immunologically compromised you can quickly boil the shrimp in salt water and do the same preparation

    Half an hour?? Needs max 30 seconds to marinade.... and freshness means not frozen!!!

      no....takes time to "cook"
      the shrimp. It's the citrus, citric acid that chemically "cooks" the fish or shrimp. Plus, it takes time to add FLAVOR 😊

      From what I've learned when it comes to shrimp it is immediately put in ice when it's fished out. So unless you use freshly fished shrimp, raw frozen fish is the way to go for the best preserved

    CEBICHE is all about Peru. The best , the original.The rest is fake. My God there is no lemon there. That is everything but cebiche.

      Peruvian ceviche has sweet potatoes..just let the mexicans do it from now on
