      As a kid when I made pizzas with my mom, I always used the back of a spoon to spread it. I was a kid. This lady is a paid chef for food service.

      What's the big deal? The last guy used his bare hands to put the cheese on the pizza. As someone who's had a food handler's permit before that's a totally "legal" move. Would I do that? The answer is NO. What isn't legal is touching a cooked product with your bare hands just before serving it just like ole'boy did at 21:52. I wonder if he remembered which pieces he touched before serving it to John.
      This guy and Gordon Ramsay make my blood boil. Always talking about disgusting this and filthy that. Yeah, ok Mr. I don't need a hairnet in a commercial kitchen. I don't know all of the fine print behind these TV shows. Maybe they're filmed in a controlled environment and in front of a live studio audience or something but the way I see them they're both wrong as heck. I'm sure that they're good at what they do and have made a lot of money doing so but they should lead by example. Who cares if you look funny wearing a hairnet, the law is the law.

      Thank you. Plus you see how clean that kitchen was. Pizza gotten even better. I hate that RUclips line. I worked hard on that pizza spent hr/ months watching video taking notes and making batches of dough til I got it right. Plus teaching myself how to stretch the dough took me a month to get it down. I had one of the best pizza maker in world say I actually have some skills when he was supposed to say I suck and didn’t know what I was doing . the tv show set me up to look bad. It’s Not what you think, They kicked me out my kitchen on Sunday didn’t let me back in till Tuesday 30 minutes before service . They told the owner I had to be alone wouldn’t let me have help. my pizza oven wasn’t even hot because it takes a couple hours to get to the proper temp. Because they didn’t let me in the kitchen til 30min before service started they said I had 1hr to prep I went to the back to make some fresh burger balls for my smash style burgers came out and I already had tickets hanging off the machine that why I was behind and didn’t get the food out on time. That’s why I was waiting to cook the pizza because the oven was 400degree when I cooked his pizza it was supposed to be 700-800 that why it had the flop. If I would of put the pizza in right away the oven temp would of been 200-300. To cook a pizza Usually temp is 525 or higher any one who know anything about dough knows that your dough need to be out in room temp for 1-4hr before it ready to be stretched. Also why it was gummy and didn’t cook right. So my oven wasn’t hot and my dough was still cold because they set me up just to get there shot. Don’t know if we had a different experience because of all the Covid rules they had to follow.
      Funny thing about the show I had one of The best pizza maker in the world to help me and he didn’t change anything on my menu I worked with him 1 day in the kitchen to train and we made bbq sauce showed me nothing about pizza. We Just made it on the thrillist.com list for one of the best pizza’s in Vegas not bad for my 1st year making pizza’s. also just got voted best burger in Vegas by Desert companion magazine.
      We didn’t belong on that show wasn’t Failing at all been thriving sense we opened still kicking butt to this day. 4.5 on Yelp And goggle. just wanted to give you some info on the show.

      Saying youtube downplays the fact that they're actually putting effort forth into learning how to properly make pizza. Most of these other restaurants have never even tried to learn. RUclips actually has great resources and experts who share their knowledge and experience, anywhere from NY chefs to authentic Italian style pizza. If you said this maybe 10-12 years ago, when RUclips still hadn't broken through the mainstream, it might be considered an amateur move. But nowadays there is an abundance of authentic culinary experts on this platform. Not to mention RUclips doesn't mean they just watch videos and nothing else, I'm guessing they also experimented a little to get it right for themselves. That's what gastronomy is about: experimentation, and learning new techniques and recipes.

      @@mollymccarronexactly, some New York spots actually add sauce on top of pizza so I don’t see the issue with it. Unless it’s like drenched in red sauce than that’s a bit excessive but there was hardly even any on top

      My local pub had a problem with a biker gang few years ago, until they got busted for selling meth and left the place. They kept grabbing free drinks and if someone attempted to stop them they said that they'll kill someone or burn the place down.

    I gotta disagree with John's criticism of learning how to cook on RUclips, you can definitely learn some really great recipes, as well as techniques. No different than watching chefs cook on public access TV.

      you can learn anything. there's no difference from reading a book, watching an instructional(lets be honest how many retail shops train employees via video?), or being taught in person. Literally colleges were making students learn from home during covid - think they are somehow dumber or less skilled because of it?
      the thing that gets lost is being able to ask questions and get feedback. repetitions are what will make you skilled at a craft though

    I've seen people toss dough by hand, but I've never seen anyone smear sauce by hand. It just looks easier and cleaner to spread sauce with a ladle. Especially since you add cheese next.

    I like how Jon flat out says to the people that he can only carry them so far. These types of shows sometimes spread the misconception that the host is a super hero that will magically fix everything, when in reality they can only treat the symptoms. It falls on the staff and managers to keep the success going, and they will go down all the same if nothing changes on their end.

      It takes a while to learn how to cook multiple things at a time too. You have to know what people are going to order so you can have all the parts ready and cooked in bulk. This poor guy is doing all that by himself and his bosses don't care

    Don't blame the first waitress or bartender for the pizza thing. Every time a pizza is ordered, she walks half a football field to the pizza oven to cook, meanwhile, drink orders are piling up, and she will be behind. You can't blame her. It's a ridiculously inefficient system. Blame the owner.

      The bar staff know Jon is coming, they’re just not told exactly when. They could be told by the staff “Jon should be here in about 5 hours so be ready” but then he shows up 30 minutes later. That’s why in most episodes they appear shocked & caught off-guard to see him so suddenly.

      @@johnnybravo5962 it was oven temp and dough being cold. Is what got me. I’m the chef on that episode, wasn’t allowed into my kitchen until 30 minutes before service it takes 1-2 hr before my oven reaches 750 degrees the temp I cook my pizza at oven temp was only 400 when I put the pizza in so the stone was still cold so the top cooked faster then the bottom. I do a 3 day Cold fermentation on my dough so I usually need to leave my dough out in room temp for a couple hrs before I stretch it. They set me up just so they can teach people about gum line.

      I've worked in a kitchen, the worst thing is a cook who doesn't care about standards. It poisons the rest of the team. The rest of us either have to pick up the loser's slack, call him out, or lower our standards. If management doesn't do anything about it then standards will just slowly get worse and worse. No one wants to work harder than the weakest link if there's no incentive.

    The way they make pizza is truly insane. With store-bought ingredients, any average person can make a better pizza in their own oven. As long as you know what order the bread, sauce, and cheese, go in, it's incredibly easy. Also, pizza wasn't meant to be cooked for 20 minutes. The key is a short amount of time at super high temperature with fresh ingredients. That is it.

    The ladies in the 1st segment may have an attitude but the fault really lies with the owner/manager. If that person isn't giving their staff the resources/equipment they need to do their job then the staff have every right to be upset.

    i worked at a pizza place for4 1/2 years as an assistant manager and seeing those pizzas made me absolutely appalled. How those employees could stomach making and then serving pizzas like those completely baffles me.

      What’s wrong with pizza from 16-20 minutes rookie of beers. Just a little bit undercooked because the oven wasn’t hot enough and my dough was token out 30 minutes before service. Pizza oven was only 400 degrees when I put the pizza in. What they don’t till you is they had the staff standing in a parking down the street for hour before service then they let you in the kitchen or bar 30 minutes before service starts so we weren’t ready . It takes 1-2 hrs for my oven and dough to be ready. Only had 30 minutes that why I waited till the last sec to cook the pizza you can see the cover still ovenr my oven so it hot. They came on Sunday kick us of the bar didn’t let us back in until Tuesday at 7:30 service started at 8. All actors/customers where all ready line up waiting for us before we even entered the bar. But seriously what was wrong with that pizza? Look good never said a word about how it tasted

Why I got into cooking myself Ive learned I can make anything I want usually better thn places you can spend 500-1000 for a small group of friends and have something sent back. Save the money.. stuff the piggy bank and get a couple cook books and seasons of chopped.. Plus makes any future relationships fun.     I've been a line cook for almost 30 years, and I am absolutely floored by that last one. If a customer tried that at any place I've ever worked, he'd probably be leaving the building horizontally.

      I used to volunteer my security services at a waffle house my then girlfriend (now wife) worked at..
      The cooks and servers wouldve hurled hot pans at anyone trying that before i even noticed.

    13:40 - 20:51 You know, as much as I like watching Jon scream at careless, toxic owners. It's sorta refreshing, when you get a place that almost gets it or has a good % of things correct. Like you can tell they're trying in some sort to get things right. Of course, I never seen the whole episode, so maybe there's something I missed. But, from what I've seen, it seemed as if they had at least 65-75% of things correct.

      Yup, I feel they just need a little bit of tuning in the direction department. The owner can definitely step in and help the cook.
      The cook was also mentioning in some other comments that he wasn't given the proper time to heat up his stone. Which totally makes sense why it had a gum line and was taking forever.

    I like that with Nevada Works, Jon is pretty casual about it. Due to the fact the place is looking amazing, they got a pizza oven, and it seems to be clean. Like it seems its having issue with management being uneducated on how to run a business. I think it's nice they offered to help this, since most bars are past this stage by a mile.

    I’ve gotta say I’m happy seeing Jon have a bit of a nice side for a few of the people he sees has potential. I’d love to see that bar with the pizza oven do well. It has such a nice environment
