    Nice job. As someone said either blister the onions like you did or sweat them low and slow. take the onions off the heat then up the heat to medium-high and cook the chop. I pull at 140 degrees and most chicago stands use a slightly thinner chop which is easier to eat in a bun.

    I went to college in Chicago and those pork sammies are the best!

    cook onions on low heat so they sweat, move onions before cooking pork chop for better browning

    I'd cut the meat off the bone in case I crack a tooth on that bone. And add a little cherry jalapeno BBQ sauce to that chop as well.

    Maybe remove the bone after cooking unless people in Chicago have bwtter dental programs than the rest of us 😂
