BRAZILIAN CHEESE BOMBS

  • Ingredients (yields ~22)
    1 cup of milk (~240 gr)
    1 cup (~115 gr.) unsalted butter
    1 tsp salt
    ~400 gr. tapioca starch
    2 eggs
    200 gr. shredded parmesan or cheddar cheese
    Set the oven to 180 °C.
    Put the butter, salt and milk in a pan and heat until simmers. Stir to dissolve the salt. Remove the pan from the stove top.
    Add 200 gr. of tapioca starch (half of the total amount) to the hot mixture and stir with a spoon to combine.
    Transfer the mixture to a bowl and start beating with a mixer. After 3-5 minutes add eggs one by one and continue to beat until well mixed. Add the shredded cheese and beat again until well combined.
    Remove the bowl from the mixer, gradually add the rest of the tapioca starch to the dough, mix by hand using a spatula. We want to obtain a dough which is slightly sticky but still can be rounded by hand. I used 400 gr. of tapioca at total.
    Line an oven tray with baking paper, round walnut sized balls from the dough and place them on the tray. (You can use a spoon to handle the dough as it sticks to the hand, it’s easier to round the balls on the baking paper.)
    Place the tray in the oven and cook for about 20-25 minutes until the tops are lightly grilled.

    Note 1: Don’t replace the tapioca starch (otherwise called tapioca flour, it’s the same thing!) with another starch or flour, the result will not be the same. I’ve tried this recipe with corn starch, adjusted the quantity to have the same consistency however the result was quite different, still fine, but different.
    Note 2: I guess the quantity of starch needed for the result in the video may vary from brand to brand, this is why we add the starch gradually once removed from the mixer. Try to obtain a consistency as shown in the video, sticky but still possible to round with hands. I really love this recipe, already made it many times! With a bit of more or less tapioca, the result was always yummy so don’t worry 😉. They will be crunchy outside and chewy & cheesy inside.
