Mine turned out to be SPICY HOT and I loved it. I used Nutrela Nuggets and soaked the chunks for 15 mins in warm water but that was not enough. So after I finished all your steps, I added some water and left it to simmer to soften the chunks!

This is very good and quick one. I fried the chunks in little oil then mixed it. Added Ching’s schezwan chutney to it. It tasted great.

I used to live in OOTY .
Over there SOYA was a very famous snack .
A plate of SOYA used to cost 5₹ and was sold all over OOTY .
It is still very famous but costs around 20₹ per plate now .
Seeing this brought back lots of memories from OOTY .
Maybe rajshri food should start a new series which highlights such unique and fun snacks from all over INDIA .
You can choose a place and make a few episodes about the locally famous snacks from that place .
Keep this up RAJSHRI FOOD .

U should boil the soyachunks for 3-4 minutes & squeeze the water properly, then fry for 3 minutes. Otherwise it tastes raw & not absorbs masala

  • @prembasky
    @prembasky 3 года назад +5

    Good recipe.
Personally, I prefer to boil the soya chunks, squeeze dry, repeat rinse and dry to get rid of the peculiar soya smell.
A quick dry fry of the washed and dried
soya chunks with chopped garlic and into whatever masala curry base makes it better.
Experiment to your heart's content and post your recipes here. Thanks to Ruchi for the basic idea.

I do like to fry soya chunks in oil till they are slightly brown and crisp. and then i add those in masala. in this way, you won't feel chunks watery but crisp.

Few tips for people who happen to see this -
    1. Try chopping up the chunks into smaller pieces. Just lay down on chopping board after squeezing out the water and chop up like one would make keema. Increases the surface area for browning and the center of each piece will be soaking more flavour than large chunks.
    2. Soy chunks or tvp are just soy isolate flour that are formed into these shapes. You have to put more effort into flavouring. Whats missing? Umami. Add tomatoes rich in glutamates or add MSG. If its hard to use chopped tomatoes in the dish use tomato concentrate paste.
    3. You have to cook it for longer so it can soak up all the flavour. In my opinion its not a "quick stir fry" dish.
Just my personal opinion as I have experimented a lot with this ingredient and gotten very good results. I have made bhurji that tastes almost like meat and it really made me like soy chunks better than before and I encourage everyone to try cooking it the way ive described because its an underrated ingredient that most people dont know how to use correctly. Even if you like it the way you cook it trust me you can make it many many times better.

hot tip - let it steam after mixing with the masala etc.

Soya remains raw if u just soak it! Instead we should be boiling it for sometime and then add it to the cooked masala. Get ready to throw the entire thing in the bin otherwise, u won’t be able to chew those raw chunks!!
