Garlic Dill Pickles || Easy, No Canning! || Refrigerator Pickles

    Hello my friends!
    The garden is thriving right now & I'm getting a lot of delicious home grown cucumbers. Making pickles is my favorite way to preserve my garden cucumbers. But let's face it...sometimes, we need quick & easy don't we??
    Well, you're in luck! This easy way of making homemade garlic dill pickles WITHOUT canning is so simple and quick, you're going to love it. Just a few simple ingredients, and you're on your way to instant pickles that taste WAY better than grocery store pickles :)
    Here's what you'll need:
    1) 4-6 cucumbers
    2) 1 TBS salt
    3) 1 TBS mustard seeds
    4) 1/2 tsp peppercorns
    5) 1 bay leaf
    6) 1 cup of regular white vinegar
    7) 2 garlic cloves
    8) 3 fresh dill sprigs OR 1 TBS dried dill
    8) A little fresh cool water
    9) 1 clean quart size mason jar with lid
    Here's how to make it:
    1. Rinse & slice your cucumbers in spears or hamburger slices.
    2. Pack your jar with all of your ingredients, then add as many cucumbers as you can fit.
    3. Pour vinegar over top.
    4. Top off with fresh, cool water.
    5. Add your lid & give a good shake.
    Put your pickles directly into the fridge where they will keep for 3-4 months. The longer they're in there, the more spicy they will become as the garlic intensifies. So if you don't like them to be too tangy & spicy, be sure to eat them within 3-4 months.
    You can enjoy these pickles right away, but I find they're best if allowed to set in the fridge for at least 2-3 hours to marinate in the spices/herbs.

    I like to add in some habaneros to mine to give them a little spiciness I started with jalapeños but they just weren't hot enough but the kids could still enjoy them and I make the habanero combination for myself

      I’ve been doing this for about three years now. We have a local farmers market. I get small carrots, red onions, and about everything else I grow. It makes a colorful jar of pickles.

    I will definitely try this recipe for some of my pickles this summer. I usually use the blue ribbon dill picked recipe(we love them). I just discovered your channel and am loving your videos. Keep up the good work!

    Just a heads up for anyone making them, I would definitely use the dill on the stems. I used dried dill and while they do taste great the dill floats so you ca t really see in the jar great and you have to plunge the pickle a couple times to rinse the dill off. Not a big deal but would be easier with them on the stem.

      makes better brine mix if you add the dill spice to 1:3 water to vinegar, and then stuff real dill stems/flower into the jar when you put the cukes.

      Hey Sharon! How are you? I have not tried this with jalapeños but that actually sounds amazing and like you, we always have TONS of jalapeños in the garden lol! We'll have to give it a shot. I usually pickle my jalepenos and water bath can them. Hope you're enjoying your summer season so far :)

    Great informative video Miss :) Question: Lets say I made a quart container worth of pickles, once I finish them like in 3 weeks Do I have to make another Jar or can I use the same liquid/brine left over?

      Hi Juan! I have people ask me this all the time, same question with my pickled egg video. I think it’s personal preference to be honest. For me, I prefer not to reuse the brine just for the gross factor that I get lol! I have kids and with everyone sticking there hands in and out of that jar, etc., I just prefer to make a new batch of brine with each group of pickles. Plus that way the garlic/herbs and all the spices are fresh & new. That way your brine will be nice & potent for the new batch. 😊

    I enjoyed your video as we just started doing homemade pickles. I love the color of the canned pickles. Is it the same ingredients as the refrigerator pickles and then boiling the jars?

      You can absolutely use the same ingredients! And yes just water bath can them. No need to pressure can. 😊

    Just found your recipe for ice box pickles. What if you heat up the vinegar? Will it seal the lid?

      Hi Judy! It most likely will seal from the heat, but I would encourage you to water bath can them properly just to be sure. If not sealed correctly they won’t be shelf stable & could introduce harmful bacteria that wouldn’t be good for consumption.
