Mom eats puppies' poos for 2 reason.
1st of all after all this procedure, she is exhausted. Those poops come from her milk that puppies eat everyday so they have a lot of Calcium that mother needs in order to produce milk for her own puppies.
2nd we can tell that mommy keeps the house clean.
If you consider that she is doing immediately and their puppies don't understand never what she is doing. It is related with a way of training when we want to learn our dog, to don't do his/her need inside the house. We have to collect the "evidences" without to see us.
