Baby Back Ribs Recipe - Masterbuilt Gravity Smoker 560

  • Yo welcome back to Anderson's SmokeShow! Today I am going to show you a super easy beginners method to smoking baby back ribs... the hot and fast method on my Masterbuilt Gravity Series 560! Come check them out!

    These smoked baby back ribs were done as part of the BBQ Pitmasters of RUclips Competition! Here is the link to cast your vote:
    Now these hot & fast ribs are super easy to make! Let me share the Andersons SmokeShow method:
    Start by doing a quick rinse on the ribs to remove any purge, then pat dry with paper towel. Remove the silver skin (membrane) from the back of the ribs. Apply a light coat of olive oil ( bit.ly/394H3Xw ) which is being used as the binder.... Then generously coat the ribs with the Meat Church Honey Hog Hot BBQ rub ( amzn.to/3cKJzD3). Let the ribs sweat while you get the smoker going.
    For this cook I used my Masterbuilt Gravity Smoker which I set to 310F. Once the grill was up to temperature I place the ribs in the center of the lower rack and tighten them up a little bit.
    I ran these ribs for just shy of 3 hours without doing a single thing.... no spritz... nothing. Just before the 3 hour mark I used some peach bbq sauce ( amzn.to/3vDpQ0O ) and gave a generously coating to the ribs. Gave them about 10 more minutes for the sauce to setup and my oh my do they look great!

    Have had a Masterbuilt 560 for 2 summers now and I love that there are more good videos on how to use it! But I had to learn the hard way to only use lump charcoal in it!

    I have a new 800 series. This hot and fast baby back ribs was the first run of my smoking Journey. The end result was they tasted great and I got all the crunch and smoke I was hoping for. The only thing that was sort of a downer, it seemed over cooked. Hard to cut clean and pulled from the bone rather than cutting. Any tips?

    Nice cook. Those wax squares look to be the same size as the Komodo Joe starters. Seeing a fair amount of these MB gravity feds out there. Interesting for sure.

      You could do 4 easily, unless you cut them to make for a tighter fit

      Thanks Pat! Oh yeah, you can absolutely do this for spare ribs too! The time would vary though as baby backs tend to cook a little faster

    What do you do with the ribs and excess that you cut off? Save up in the freezer and slow cooker later?

    There are hooks to hang those vent slats on the side or back of the hopper. Holes are in the slats.

      Yeah I know... they seem to get in my way when I put them there because I also use those hooks to hang my tools.

      James, it really depends.... I love the quality and controls on my camp chef. Pellets are also cleaner and more efficient... but sometimes that charcoal is just sooooo good to smoke with

      B&B makes some great charcoal! I’ve had good luck with Jealous Devil too... but to be honest I think the Masterbuilt charcoal is good as well

      Hey Nancy, I didn’t add any additional wood or charcoal during the cook. Most proteins absorb the most smoke early on, so I front loaded my wood so that the cherry would get to those ribs at the opportune time.

      I think I like lump a little better. It seems to give a bolder smoke flavor

    How was the moisture content of the ribs? Could not tell but they looked dry in the video.

      They were perfect! Now remember, the fat content in Baby backs is less than spare ribs, so they will be a little less moist

      @@AndersonsSmokeShow I have recently purchased a Camp Chef pellet grill but have only tried spare ribs unrapped. I cooked bb ribs in an electric smoker wrapped but came out dry. Haven't gotten to use the Camp Chef yet on bb ribs.

    The owner’s manual says add no more than 1/2 pound of wood chunks in the ash hopper or 1.5 pounds throughout the hopper mixed with charcoal

      I don’t physically weigh anything, but I also don’t go excessive with it either…. And it’s never been a problem

      The hopper is essentially achieving the same thing. Using a chimney starter would make for more work

    I didn't see where you turned it over. I am trying to avoid burning the bottom. Can you give me the full instructions please?

      I dont ever turn my ribs over. If they are getting too done on the bottom, move them further away from the heat source.
