I would like to suggest a thing here . If you wanted to explain a concept , please take the right examples and explain . Explaining with the wrong example (regression example) and convincing that it’s an interpolation is not the right thing to do. Hope you read this message .

You can use regression, but the features matrix is different. Your target is next time step value, and the features are a combination of previous values in timeline.
