I appreciate anytime someone offers a healthy alternative of anything. But, I know there is no way I could cook the vegetable in water and discard the water that's loaded with nutrients. Then put it in ice water where it's watered down even more. I would roast or steam and then set it right in the freezer for more flavor and nutrients retention...and go on from there.
