Cowboy Kent was so nice that he actually commented on Uncle Roger’s video about how happy he was that he did it. I started watching him because of Uncle Roger’s video, and I will say he’s such a warm, and honest guy it’s fun to watch him get excited cooking.

Butter is an odd choice of fat for fried rice for sure. However, my grandmother (after being in the US for awhile) used to make us kids a quick after school snack sometimes made from fresh hot rice, a spoonful of butter and a splash of soy sauce - she’d mix it up and sprinkle with toasted sesame seeds. Sounds so simple but it was delicious and pure comfort food. I made it for my own kid when he was a tot as well. Not fancy but 🤷🏻♀️
Its the simple things like this that make lifetime memories. Mine is mac and cheese mixed with chili,.. Mom used to make this a lot when I was a kid, she has since passed away but here I am at 55 and still making it for myself, Its pretty much 1 box of mac and cheese and a can of your favorite chili cook separately get the mac n cheese together then pour and stir in the chili and done
Hibachi chefs do use butter in fried rice. Definitely not a Chinese thing. I would never do it myself personally but its not bad

I think these freezers you are mentioning on the fishing ships are flash freezers. This technology was brought to the world by Clarence Birdseye(yes, as in Bridseye food company) who was apparently inspired by the Inuit's method of rapidly freezing fish in very thick ice. The tech has come a long way since then.
Kent Rollins is a joy to watch. Many of his South West recipes are quite good. He uses a lot of canned/prepared ingredients because he isn't an elite RUclips chef, and he does cater on ranches where there is limited access to kitchen facilities.

What does a white man in a cowboy hat know anything about about sushi? Simple! I don't know if you know, but there are these modern things called automobiles. They can take you from destination A to B or wherever else you want to go like say, a restaurant. There is also the internet that can give you a massive array of information, literally anything you want to know, like where to find this said sushi.

it's hilarious watching someone who is not familiar with the country living (ranchers or farmers). they don't really take much mind to personal hygiene. most times they just wipe hands with a damp or dry cloth and then eat their lunch. they only clean up when they go inside their home so they can eat dinner

@PhycoKrusk not exactly, if you're a chef you should be able to make it better than him. Bobby flay has too much ego when it comes to his show which is why certain things that seem basic to a chef he can fuck up. Too much confidence

Kent genuinely is the same guy IRL that he is on camera. His recipes are very folksy. They're the types of food that a mother in the American south, the Appalachians, or the southwest might make for the family. Some of his recipes on Mexican food are super worth checking out. His traditional barbecue and "upgrades" of fast food items are 100% worth analysis. Please check out more of his vids!
Kent Rollins is one of my favorite "TV" chefs because he respects the culture behind the food never once claiming its authentic unlike other TV chef.
Cowboy Kent is awesome compared to all the other "I'm cooking the traditional (insert any Asian dish here)." Because he admittedly say he is making a non-traditional one unlike those beings just skim the recipe a little then throw anything they saw in their pantry lol
I like a lot of Kent's recipes - they're always a bit rustic and rough around the edges, but that's part of the charm. I like de mi rancho a tu cocina for the same reason

Really is a lot of fun to watch his content. Especially if you like to go camping, I've gotten a lot of ideas for good and rustic style cooking recipes from him.

As a re-enactor (civil war/ French and Indian war/mountain man rendezvous) I can say that cast iron, wood fire, spits, and the occasional wood stove, are all things I'm accustomed to. His recipes DEFINITELY work for that. Also, living on a farm and harvesting our own meat, slow cooking in cast iron/ovens/crocks/spits, is 100% spot on.
Finally, I will say that cooking over an open wood fire (not always efficient) always adds just a bit more flavor that makes you go "Mmmm".
Regarding the fish freezing at around minute 5:00
I am a biologist, and I would advise that if you eat raw fish to only eat fish that has been frozen before. A lot of fish carry parasitic worms (called nematodes) that will survive if the fish hasn’t been frozen or cooked. I am not sure how it is in places like Japan, where the fish is often meant to be consumed raw which results in the countries having higher food safety standards, but in Europe and the US, where fish is usually meant to be cooked (or at least smoked) before consumption it might not be a good idea to eat fresh raw fish.
Yeah I'm also guessing that the Japanese would have stricter/different standards since they eat so much fish in general and raw fish specifically.
I remember watching one of Bourdain's travel/food series from a few years back and the sushi chef revealed the open secret to his tastier sashimi, is that it's gone through some kind of his own prepped flash freezing processes. It's one of the Japan episodes, but can't remember which.
I have heard that the best sushi chefs will only use fish that was frozen immediately on the boat. Apparently the fast freezing even helps improve the texture of the fish, in addition to killing parasites.
all fishing ships in Japan that capture sushi-grade fish have powerful blast freezers that are set to -60C and basically take up the entire fish hold of the ship.
Any catches go into the freezer immediately and stay there until they return to port and unload.
Very nice explanation of the freezing process! One thing though, fish do not have cell walls. That is something that plant, mushroom and others have but not animal cells. :) Only cell membrane for animals. I know, not important, but I could not stay silent as a cell biologist.
So is there something different about the cell membranes of fish and meat that allows steaks to "take a beating" from ice crystals?

I remember learning in primary school that the cellulose walls get ripped apart from the ice crystals, explaining why all my apples cubes turned mushy when I tried freezing them in ice cubes (I was 8).

I love Kent Rollins, a lot of my favorite recipes I make at home come from his videos. Definitely not traditional, but I've had to use butter in fried rice before and it turned out alright

I live in Australia and I’ve heard sashimi has to be frozen, legally, to ensure certain parasites are definitely destroyed and I don’t think we are alone. I could be wrong,though.
Well tuna itself is usually frozen immediately when caught. You can check out videos of japanese seafood market.
Here in the US, food safety varies by locale, but I am pretty sure the FDA Food Code also requires lowering temp for sashimi
Depends on the quality of your local seafood. Different areas need different treatment.

Norwegian farmed salmon doesn't have the parasite (Anisakis worm) so it's not required to freeze before serving raw and they are constantly monitoring for it, but other places do. Still, the salmon is often frozen anyway because it has to be transported for export.
Cowboy Kent makes some amazing dishes. Everything he makes is made outside. Nothing it made in a kitchen or a gas stove. Everything is made using wood, even his stove is a wood burning stove. He's awesome.

@Joe_for_real He won one round of the first Chopped Grilling tournament but lost in the end. Then he was on a Redemption episode but lost because he cut himself in the dessert round and got blood in the food.
Do watch more Cowboy Kent videos, he makes pretty cool rustic style recipes.
My only issue with the cowboy's fried rice is how he did the sauce. The sauce itself isn't bad but somehow he made it look vile. Still, I'd eat that sauce over anything Jamie Oliver cooks.

It wasn’t habachi but a sushi restaurant I frequent says they add a little butter to their fried rice. That fried rice slaps pretty hard too.
To be honest him making the sauce reminds me of when I first experimented with making egg fried rice Indonesian style, but I use oyster sauce and I almost used sugar but then I was warned that white rice is already sweet
Also a little note chef Brian: in Indonesia, although I never eat it there is goat fried rice and I believe that it uses butter but only like at the end
In Indonesia, Right We Usually Use Vegetable Oil, But Sometimes We Used Butter or Margarine Too, Butter Or Margarine Act as Subtitute for Vegetable Oil,
Tho. I Myself Usually More Prefer Garlic Oil as it gives more garlic fragrance..
Also Oyster Sauce is Not Bad, Tho. It More on Korean Style Than Indonesian..
in Indo we Usually uses Sweet Soy Sauce or Salty Soy Sauces.. or even Both, n Don't forget Sambal if you like spicy, salt n msg also.. 👌
For the rice part that people say it taste sweet is correct but not completely, cuz it's actually taste bland with a just tiny lil bit of sweet so..
you correct don't used sugar, sugar are just for dessert making, not main dish cooking, if you like sweet, we uses sweet soy sauce instead.. 👌
Oyster sauce is Chinese (Cantonese). I'm guessing you are Dutch? It can be somewhat confusing as in The Netherlands what is referred to as Chinese is traditionally something of a fusion between Javanese and Cantonese style cooking and you're likely to see that listed as an ingredient on the menu because as the name states it is created from oyster which is a shell fish and is on the allergy list. It's not completely wrong though, because nasi goreng does contain a fish element (trassi - fermented shrimp paste) and also a sweet element (ketjap manis - sweet soy sauce). As far as I'm aware it is not common to stir egg through the nasi goreng, it is however often served with a fried egg (sunny side up). It should however be noted that in The Netherlands nasi goreng is usually eaten as diner and we tend to enrich it with meat/fish/shrimp and veggies (stores sell mixed vegetable packs containing bean sprouts, cabbage, carrot and string beans but really everything goes) and the egg doesn't come into play at all.

As for rice, I can't eat more than a bowl of plain rice without seasoning in a week. This so far is the hardest challenge when I studied in South Korea, rice is kinda everywhere. I do love rice, but come on, you can pour a bit of soy sauce in it or at least season with salt.
I love Cowboy Kent! I have his first cookbook and have made some of his recipes. They are delicious! I even made his cowboy coffee and used Folger's coffee. It was one of the best coffees I've ever had! 🤣

Here's the thing when cooking around the fire at a ranch or campsite you will get dirty and even if you wash your hands the water isn't hot or running (use antibacterial soap). Your nails ain't getting clean until you get home or to a real sink. You will also get a little bit of dirt in your food most of the time. It still safe for the most part as long as you thoroughly cook everything and heat your dish water (try not to burn yourself).

I loved the Stray Kids refference where Felix says 5 star Michelin in the song "God's Menu" (Referening to Stray Kids being so skilled that they get a 5 star instead of the normal 3) I am half Asian and half Italian and grew up on Asian and Italian food and I have seen people handle rice in the strangest ways (including by my father in law) I'm very particular with my rice, I don't think I could eat that version but I do love how nice he is and I loved his reaction. Chef Brian! I absolutely adore how you react based on what the host is saying. Here, Kent isn't trying to be traditional. He uses a couple traditional elements, then goes bonkers off the wall with the rest. I'm sure the finished product was tasty. I love how you aren't really biased, you just educate with each step. I love Kent. He actually does some stuff that would probably be delicious (I haven't personally tried any of his recipes). He's just a humble, sweet guy with a lot of enthusiasm, which goes a long way.

Maybe I'm the only one, but I kinda like adding celery to sauces and rubs (though, generally as celery seed or celery salt). It adds a little sweet earthiness to what you're making without adding much in the way of flavour. Same reason I use it when making chicken stock...
I've seen egg fried rice from the Philippines where they melt butter over the rice near the end of cooking to help combat the darkness and heavyness of the amount of soy sauce and fish sauces they put in, but that was just one time so I'm not entirely sure.

Kent’s videos are typically Chuckbox or Dutchoven based cooking. When I was growing up we went camping a lot, and cooking that way is a different beast. You will have things in your Chuckbox you fight find in normal kitchens.
Also, Kent has been on RUclips for 13 years. He definitely has a style he likes to work with. His first video is really short but might give some context to what his theme is.

There is another reason to freeze fish for shasimi, it kills any parasites which might be in the fish

If you want to cook fried rice with Butter, use Clarified butter, Ghee, or even popcorn oil. Or if you like the milk solids, add them when the cooking done, then mix up.

yaknow, they don't have to import fish for sushi... they got these things called lakes and rivers with fish in em. amazing i know, but water, just sitting there, in the middle of... well, yaknow. anyway, cutest thing about cast iron frying pans, unlike woks, couldn't be made before the industrial revolution, before that frying pans were glazed pottery, fragile, somewhat disposable, fun stuff.
Freshwater fish is a surefire way to give yourself worms if you want to eat them raw... 😅

I live outside San Antonio I drive a half mile and get to ranches like this.i drive 20 minutes into town and I get great sushi on par with what I've had when I visited NYC every weekend back in college. I know you New Yorkers love to look down on every one else but you might be surprised
Speaking of fresh fish, I was so shocked when I went to a sushi restaurant in Busan and I saw a guy moving fresh fish in aquariums from his truck into the restaurant. This was awesome, dunno why sashimi was so thick though
What is funny is Kent's rendition manages to be far more traditional than a GOOD portion of the other "authentic" dishes Uncle Roger covers. Plus I bet it tastes pretty good to boot.
