    Actually Wang Gang is using the official standard recipe for Yangzhou fried rice, and that calls for Xuanwei ham, which is less salty than Rugao or Jinhua ham, and no carrot. But since Adam didn't go to culinary school, let alone a Chinese one, you can forgive him for not knowing that. It is still impressive that he knows Rugao ham to begin with.

      I understand why he takes so much time to go in depth now. Its the lawyer in him, the thorough nature in it, because if he didn't learn like that, there would be holes in his legal defenses. So when he approaches food as a topic, his methodical nature shows, his passion shows. Its interesting to see

    19:45 that subtitle actually add by uncle Roger himself to troll, chef Wang actually mentioned in one of his vlog, is the hidden rules as a chef not to comment on other chef's cooking method
    And chef Wang gang worked at restaurant before, at peak hours he need to cook extremely fast, that's why you see his style is like fast and furious

    Just some additional info: Chef Wang went to Yangzhou himself to learn about Yangzhou fried rice from local chefs, and then he made this video. It seems like, according to my memory about that vlog, such egg string covering the rice is the desired form of Yangzhou fried rice.

      He did this with Buddha jumps over the wall, too. Traveled to Fujian to learn more about the dish since it's not exactly sichuanese cuisine.

    It's so great to see the respect among so many chefs across the world. It's genuinely fascinating to watch them all apply their craft with their own regional styles. Wang Gang is absolutely amazing, and I'd have never have known about him were it not for channels like this.

    One thing I love about Wang Gang is that he was out of his wheelhouse making that soup. He has another video where he traveled to Fujian (iirc) to eat it properly made at a restaurant in order to learn more about the dish. Since 'Chinese cuisine' varies pretty significantly by location.

    Adam's style reminds me of my teacher when I was in high school. Nothing is wrong with it because everything has its own merit and market. As long as it's not about someone chopping garlic for a long time or someone's in-law who pounds green curry paste for a while, I'm fine with it

    Chef brian, if you serious about that uncle title, may i suggest you make a Malaysian dish to get Uncle Roger attention.
    Some suggestions: Nasi Lemak, Curry Laksa, Bak Kut Teh, Beef/chicken rendang, Char Kuey Teow, Asam Laksa, Kam Heong seafood, Chinese popiah, Rojak, etc etc.
    Well, your wife is Malaysian, so she should be able to taste test your cooking.

    I would love to see some videos of Wang Gang cooking western-style food. I do agree with Adam about Jamie Oliver: SOME of his stuff is great (I use his recipe for roasted potatoes and have never had better ones in my life), but he doesn't have the basics down to transfer what he knows to any other style of food. Wang Gang, on the other hand, is clearly a master of the basics, like knife technique and how to treat ingredients to get the very most out of them, which makes me think his knowledge is probably far more transferable to other types of cuisine.

      Yeah, as much fun as it is to dunk on Jamie "Olive Oil" Oliver, especially when it comes to his butchering of Asian cuisine, he is actually pretty good with more European styles of cuisine, especially Mediterranean cuisine. His video about Carbonara got the Vicenzo seal of approval, so that's good enough for me to know that Jamie isn't a _complete_ joke.

    No such thing as "Culinary School: in Australia, you apply for an apprenticeship and while you work you attend Tafe (trade school?) while you are working. You learn on the job.

    I think some Chinese viewers mentioned in the original video that Wang Gang uses Xuanwei Ham, because it was not as fatty as Rugao Ham. So Chef Wang might have made the decision to reduce the overall oiliness of the dish.

    That yeunyeung fried rice looked amazing. And it's funny because they put sauce on top of the rice, which was something everyone was ripping on Cowboy Curtis for that.

      They put soy sauce into the side of the wok to help cook out some of the moisture and like Adam explained, it helps with distributing the flavor to all the rice. Also, there was additional cooking to help keep the wok hay permeate through the fried rice. In Cowboy Curtis's case, all the sauce was poured over top of the rice which served the purpose of taking away all the crispiness and crunch that would have developed on the rice if there was any.

    I think maybe you could get nicer egg threads with a spun yolk maker. It looks like a small watering can with multiple beaks. Its a tools used in making the dessert Fios de Ovos in Portuguese and Brasilian cuisine. You would probably get some finer threads and it would be easier for anyone with less experience.

    One type of cooking video is purely instructional, while tho other type tries to explain to you the reasoning and maybe some of the science behind the things you're doing. The first is good for just making a meal while the latter mocht help you become a better cook more because you will actually understand why you're doing something

    When I saw him running the oil through the sieve I thought he was using the same oil over and over again for seasoning the wok, and I thought that it was pretty smart. But I was wrong. Very interesting video.

    You can also cook the rice with less water to promote separation and add lard or really any fat that will be in the fried rice. It will create a very interesting texture reminiscent of pilaf but fried rice. Takes practice to know which grain length will handle how much less better. Remember that most rice cooker trap moisture and return it back into the rice when cooking, so it can actually handle less water. than 1:1 ratio but not extremely less.

    I would recommend the video on adam’s channel. It’s really fun watching how he changed the editing style when roger came in.
    And in fairness to Adam and Jamie Oliver, when Jamie does British and Italian food, it’s good but with that said, stick to your lane or do the research, because as someone who is a cooking personality like Jamie you would expect him to at least understand the good he’s making while making it healthy. Like don’t use olive oil for Asian dishes and add random mushrooms and tofu in to dishes that don’t need it because it’s healthier.

    As a housewife, I cook the egg floss like that sometime for fried rice, but without extra yolks, it is mostly for the yellow color, doesn't affect the taste. Just my opinion.

    You can really see the difference between Nigels and Adams video.
    Judging objectively, as someone that creates educational content for corporate and training purposes, Nigel's video does a better job of presenting information. The amount of information shared is just enough to provide the viewer with an idea of the science behind it without overwhelming the audience and the editor pairs it with relevant visuals to aid in the capture of information.
    In terms of pace, I feel it's not that much faster than Adam's video, it just feels that way because you are always engaged with every second of the content. Whatever is in the video adds value to the audience.

    Several points from me as a viewer:
    1. It is a bit unfair from your side to poke fun at Adam for structuring his cooking videos in an educational way, because you yourself, when reacting to other videos, provide feedback in an educational way as well (although your style is more casual, for the lack of a better word). Not trying to be a dick about it, just a small observation from my side :)
    2. IMO liking Jamie Oliver is OK (besides his asian cooking, because jesus fucking christ). The guy actually has some good pan-european recipes, plus his general message is promoting home cooking and using local ingredients, which is always nice. And in general, his recipes are rather easily reproduced at home, which unfortunately cannot be said about Chef Wang Gang (being a god tier chef that he is).
    Other than that, the content is great, thanks for your work!
