I wake up at 4:30 pm leave my house at 5:30 pm get yo my job at 6:45, clock in at 7:00 and at the latest I get home is 10:00 am, and earliest at about 3 or 4 am. And it's almost every body that is commuting over here. It's tough but you got to do what you got to do!!

I think it's to control spoilage and waste as well as to be more flexible through out the day. You can easily add sauce to the pork but you can't really take the sauce off it once it's been marinating. I agree though. I can't picture these tasting authentic. We simmer the beef, pork, & chicken in the salsas so they really absorb the flavors.
I've tried these tamales and they are bomb not dry and have flavor it was worth traveling to try. Please give him and his business a try
