This dish was a hit! I made some last night for dinner and we ate it with rice. This morning I heated it up and prepared some grits, eggs and toast with it for breakfast. Thanks for sharing this meal. I'm so glad that that I don't have to spend all day in the kitchen with this, either! The only thing I did differently was sautee the veggies first in a tsp of oil to soften them up a bit.
Chris, man I think you mess this one up. You should have sauteed the onions/tomato/green onion/peppers etc before adding corn beef. Uncooked onions does not pair well with corned beef, onions must be cooked to get rid of rawness.

I agree, except that I'd remove vegetables after they are stir fried and return them after corned beef is cooked. That way, beef is quickly browned and evenly.

I like this way of canned corn beef with the peppers, onions, etc. I'm American and the way my mom made it was we make a gravy with onions then add the beef and eat it with biscuits. Yummy. Lol
Puertoricans have a similar dish. We use potatoes we usually fry them put aside. Take a pot add some water about a cup, add Prican Sofrito, some tomato sauce, black pepper and a pack of Sazon, Let that come to a slow boil then add the Corned Beef. Cook that for about ten minutes then add the fried potatoes. Cook for another 10 and serve over white rice.

I try to always start with a positive...but in this case there is none. There are two ways Jamaicans eat "Bully Beef" and what you did there was a trainwreck. 1. If youre eating it cold you could probably get away with raw vegetable in it, but then its a sandwich with some Pickapepper Sauce in between 2 slices of Hardough Bread. 2. That amount of "CAribbean Sunshine in one tin of Bully Beef is RIDICULOUS, but you are a Trini and probably can handle it, (no disrespect). 3. For cooked down Bully Beef the vegetables DO get sauteed first, then you add the Bully Beef, the Too much oil business is not true. I use Coconut oil and its not greasy in the end.

No disrespect, i guess people cook it differently but i cook the onions and everything first till its just about cooked and then add the corn beef in, and i put a little bit of vinegar (yes weird but give it a try about a small cap sized amount makes a difference) and then i let the cornbeef cook down and it comes out good, i even put some sweet peas in it, or even some chopped cabbage. Give it a try one day it's good! I'm 100% Jamaican BTW lol
The price is very dare now. I'm American, my Jamaican mother used to make this for me when I was a child. When I spent my summers in Jamaica I looked forward to my Aunt making this for me.
I was looking for a recipe that didn't involve potatoes and so glad I found this recipe! Just made it. Added a minced garlic clove and chili flakes and topped it off with a sunny side up egg . It was delicious! TY for sharing this recipe!
+caribbeanpot You should try it with Australian or New Zealand brand corn beef.. they are called "ox n palm" or "palm" and they usually sell them in Asian stores and markets... that's what we pacific islanders eat. trust me.. you'll fall in love with it.

Great recipe man, I've had a can of corned beef sitting around for years never knew what to do with it. I like this version the best, the vegetables are still crunchy and it doesn't turn out soupy like all the others I've seen. What is with people saying it's undercooked? It's already fucking cooked! I just added a bit of garlic and Vegeta spice.

If you like it crispy I would suggest popping it under the grill for a few mins to crisp up the top keeping the softness on the bottom.
