Great unit, bellows is a must. You’ll need a 1-1/2 to 1” reducing bushing to hook up the ball valve adapter. Any good plumbing supply store will have them ( I think I paid $7). If you want to put a valve on the grease drain, it is 1- 1/4”.
Man, I always finish my cooks off in the oven. It’s pointless to keep it on the smoker past a certain point. You can actually get too much smoke. My neighbor looked at me sideways when I said that 😆. You’re the first person I’ve come across on the YouTubing machine that does that. Anyhow, I’ve been looking at any and all videos of that smoker and a LSG insulated vertical. Tough decision, both are solid as hell. The one thing I’ve seen is the Old Country gets up to temp faster. Thanx for the video, sorry bout the rambling.
I might like to try this thermometer fan but I don’t know where to find one I just bought the old country gravity smoker and I love it I’ve had only 2 cooks on it and it turned out great for a novice cooker like me This thing is a beast
If you’re still having issues with the probe on expanded metal grate just stick it through a raw potato. That always works.
What ball valve connector you use on the fan. Because on their website that offer a 1 inch. And the ball valve size is 1 and a half inch

how does the billows connect with the air port, is there some kind of attatchment adapter?
What adapter you using to attach the fan to the smoker?
I run my cooker prob down the stack through the first self so it is hanging free. When checking how much charcoal is in the chute. Make sure you do it after the wood box is done smoldering. If you have wood smoldering and you open the charcoal lid. The piece of wood will catch on fire and start the charcoal on fire in the chut. It sucks when that happens.

How are you liking this setup? I already have a FireBoard 2 and a fan that I bought for an old country Brazos but never used it and sold the bravos. Been wanting to get this gravity one
How long did it take you to get the smoker up to temp with the fan running?

How many Butts could cook in this at a time?
Some aluminum foil on the chute, will protect your gasket.
I like gravity pitts but I don’t like all the electronics The fun to me is tending to the fire and food not set it and forget it
I have a big Lang right behind this one that is that kind of smoker for me. Real wood. I bought the gravity fed specifically for overnight unmanaged cooking.
