I know, right? Considering the excess heat in the summer, grilling in fall and winter just seems more appropriate. Then again, there are places where it gets cold and wet, so maybe grilling is best left to the nice weather months. Still, a Thanksgiving or Christmas grill/BBQ party sounds like the best idea ever.
I am a Pacific Islander and I am also a butcher certified by the USDA. I just love to grill anything that I could get my hands on and I love and enjoy your spices got the whole 11 rack the family loves it and keep up the greatness 👍👍

I was NE Ohio last summer and picked up some steaks in person to grill at our Airbnb. Weekend so missed the bros. Brought home a Bison Porterhouse and will grill it for my birthday.
I'm in Australia. I was in the US twice back in 2019. I fell in love with both bison and elk. Bison tastes like the best cut of tender beef, and elk has it's own mouth watering taste. Great to see you cooked both meats unseasoned so you can taste the actual flavour. I wish you guys would export both meats to Australia!!
Just found your channel. I practiced the noble art in my village butchers nearly 3 decades ago. Brings back many happy memories. Sadly, the shop & slaughterhouse were sold off for development. The bandsaw footage always makes me cringe. When one of those blades snaps it makes hell of a bang! It was hard work at times, but I’m glad I had 10 years at it. A real education.👍🏻

I work at Central Market down here in Texas, we have Bison and Elk, and other exotic meats! But the Elk is very pricey but worth every cent! It's good to spend money on quality!
I know you boys want to sell your seasoning but I guess I'm a meat connoisseur because I can appreciate a good cut of meat with just the basics of salt, pepper and garlic powder....multiple seasonings actually take away from my pleasure of the meat product, to me less is more! But great video and the cuts were cooked to perfection!!!

Fantastic! I no longer hunt. So I have not had Elk in a long time. I miss the taste. I am giving Bearded butchers spices and BBQ sauce out for Christmas. Turning my family on too Black and Brock. My favorites. Then Zesty for veggies.

Just wanted to let you know that my wife made a big pot of Vegetable beef barley soup. It didn't have enough spice for me so I added your Hot seasoning. It was perfect. Not just for meat!!

Damn, those looked absolutely delicious! Don’t know who’s idea it was to grill some squash, but kudos to the one that did. That is the best looking squash I have ever seen on a grill, that’s 💯💯‼️
one thing i’ve found that helps when cooking thick steaks is get a knife that’s about the with of you pinky finger and cut 2 or 3 tiny holes from top to bottom, just push it in, & then out the steak cooks a little faster while not getting heavily charred. then with the porterhouse do the same thing as above, but also cut 3 small slits along the strip side against the bone so the heat from the grill can get to that part, & then the same for the fillet side but 2 slits. i also cook mine on the top rack with high heat to kinda get the rotisserie chicken idea where the steak cooks but doesn’t char, then when my steaks are medium rare just before medium i put them on the bottom to sear them while they come up to medium well. i like medium well only because i want a really hot steak. steak, & baked potatoes are the only food i enjoy hot everything else i wait til it gets to room temp before digging in🤷♂️🤷♂️

I was a meat cutter/manager for more than 35 years. I started with quarters of beef and as time went on they gave me box beef. As a guy that was doing carcass beef it was hard to do that.
The most important part about cooking elk is to not overcook, if you are going to fry it put some bacon greese in a pan , a little salt a little pepper maybe a touch of garlic powder , put it in do not walk away from the pan! Cook short time flip cook short time serve hot and juicey elk backstrap hashbrowns eggs over easy , best breakfast ever😊😊😊😊😊
Great video and good luck on your elk hunt. I am also a hunter and filled my elk tag this year and i always process my own game and i have some incredible steaks, roast and burger. For me elk is by far the best meat i have ever had. I am from the pacific northwest and we have both elk species here with the Roosevelt elk on the west range and Rocky Mountain elk on the east range. Both are excellent but they do have a slightly different flavor and i believe this is due to the vastly different food sources. Maybe you can do a 42 day dry age elk vs bison challenge. That would be very interesting.
I would have used a bit of sea salt on the "unseasoned" Bison and Elk. Probably do not need all the other spices used on the second tastes for a more true comparison . (not to try to take away from your marketing)

Elk is my favorite red meat (so meat). I like Bison very much, but I wouldn't pay a premium for it. There simply isn't enough difference between the best beef steak and Bison. Elk, on the other hand, is its own unique thing. (I can't believe you put Elk and deer in the same sentence when discussing meat features😄)
I much prefer grain fed or grain finished beef over all grass fed beef. My favorite meat of all is wild elk. Wild elk is grass fed. I would never have believed wild elk would be my favorite!!!
In this context, I believe exotic is analogous to unusual, since it is not yet treated by the broad public as a staple in the way that beef chicken and pork are.

If I had to hazard a guess, the "exotic" designation is kinda just the government's catch-all for anything that isn't standard livestock. Also, man, these steaks all look fantastic.

I use the stove inside maybe four times a year. I go through a lot of propane and smoking chips!

If I fire up my grill there is always some zucchini, yellow squash or bacon wrapped asparagus to go on too lol
