Perhaps the episodes on DVD are so good they can be paused clearly, whereas when it aired everything happened so quickly they figured no one would notice? Although maybe he should have raised his fist between his face and the camera. There's a stuntman for Spock took that throws those punches, but it's a little harder to tell as his profile is just in camera for a partial second.
That was a very entertaining episode. I loved many scenes in that episode....Spock hanging off the branch, the particular scene shown and Spock speaking of his loyalty to the Enterprise and Captain Kirk. It would have been good to see the final part of the scene, when Kirk says, "had enough"!
