    I got myself a bunka as my first japanese knife two weeks ago. I'm super satisfied with it as I don't need a long knife at home.

    Seems like a kiritsuke would have been a natural third man in here. The length of the gyuto with the tip and cool factor of the bunka. Feels to me like the natural comparison to the gyuto is the santoku. Either way, fun video always great to see content from you guys.

      I have a kirituske, a gyuto and a bunka. My choice is mod a Nakiri with angle grinder and turn it into a bunka.:P

    I'm a sucker for bunkas. I find their blade geometry extremely pleasing to look at and they cut just the same, besides, I don't really need (or like to use, even) a long knife, I'm fine with 6 or 7 inch knife for day to day use, as I only ever use a longer knife for raw meats, which I usually just buy, separate, and prep it all at once for the month

    I know Gage that you have said you don't focus on a ton of single bevel stuff at Sharp, but a yanagiba versus sujihiki video would be pretty neat.

    So I'm planning on just getting one of everything, I'm sure I'm not the only other one doing that so you should just do a video where you pick "sets" of one of every type of knife. Sets can be based on price, higher end and lower and mid range. Or sets can be based on stainless, carbon, or San Mai.

    IMO the bunkas are way more badass... but then, there are ktip gyotos as well, so in the end everything is badass! Both win

    I went with a Hatsukokoro Shirahama bunka as the gyuto is very similar to my German chef knife.

    i have a large collection and still cant find a good definition of diff between kiritsuke and bunka even though i know i have both

      It's the bevels. Most bunkas have a double edge, albeit at a very acute angle. They're a general purpose cook's knife. A kiritsuke traditionally has a single edge blade. It takes a huge amount of practice to use a traditional kiritsuke proficiently. The kiritsuke-gyuto has a double edge blade. It's basically a gyuto with the profile of a kiritsuke. It's for cooks who've been trained in the western tradition of double edge knives.

    I got a 9.5" blade bunka with aogami super steel and a black finish. I look like a samurai cuting vegetables, it means the bunka is cooler.

      Makes no sense to me.
      Honesuki is a thin knife designed to take apart poultry without breaking bones.
      Deba is a knife with a thick spine weighing much more than Honesuki designed to butcher large fish and break bones (of fish)

      Deba comes in many sizes and the smaller ones can be used for many things, I own a deba.....

    The gyuto looks more like a common knife, so the coolness factor HAS to go to the bunka, which is more unique looking.

    This test should've been done with a bunka and gyuto that are both like 210mm. Gyutos are not always longer.
