Barista tips and knowledge: By adding the boiling water, you are essentially thinning the almond fat content in your almond milk. Which is fine, but I bet you would get a much fuller flavor using all almond milk or you could get something equitable using all store-bought almond milk instead of mixing in water. Also, I highly recommend you steam the milk before you pull your shots. If you let your shots sit for any length of time, they slowly get more and more bitter. This is called “killing the shot” and it isn’t that good. If you have your milk ready to pour over the coffee as soon as the shots are pulled, you ensure a perfectly brewed espresso shot and a grade A latte for the day! :) I love your videos and your commitment to whole health and organic consumership!!

For cold drinks a great tip is to freeze coffee and just blend it with some almond milk and cocoa powder 😇😇

No need to swirl or go up and down with the milk pitcher. You wanna let the steam wand pressure do all the work by making a whirlpool in the milk with the tip submerged just under the surface. You slowly move your pitcher down (aiming to keep the wand tip just beneath the surface) as the milk heats and stretches.
After you finish steaming, you can tap your pitcher on the counter to release any air bubbles and give it a little swirl to texturize. It should resemble wet paint.

2 tips to protect the cream layer of the coffee that keeps all the flavor (aroma).
- Only use a cup for the entire process. Do not transfer coffee from one cup to another.
- Put the boiling water first. Then make the coffee on top of it. Finally add the milk.
(I worked with baristas in a well-known Italian restaurant in London. they were very demanding with these rules).

Thanks for the video, I just got a machine yesterday and wondered if I could use almond milk. Looking forward to trying it! Also I use maple syrup to sweeten my lattes.. honestly, it is amazingly soooo good. If ever you want to try; )
