Without it being edited I think I'd be able to follow it fairly well. I think the edited bits do a good job of throwing you off so you give up and lose the rest of what he is saying. Thanks for the subtitles!

In season 2 Gerald seemed to be much easier to understand. Maybe I am more used to the accent or they edited him less.
I think a bit of both. They’ve definitely experimented with him - like messing about more when his face and mouth is not visible.

One of the question marks you have - I'm pretty sure he says the word 'adverb' - he's referring to some farming story - at 1:49 I think.
Adverb, yes, that's what I thought. Though I think Gerald meant proverb
