I love how they allow food stalls to be in these areas. I wonder sometimes though if it wouldn't be better to have a somewhat more permanent fixture there, so the stall holders wouldn't have to go through so much work every time to setup their stalls.
These small structures would not withstand storms and severe weather. They need special permits from the city and there is usually a long waiting list. The rent is not cheap, but the city provides water and electricity lines in some places. They also have to go through strict health and food safely department checks and the area is washed and sanitized every night after they are done.
Consider the mixed-use nature of this space. During high traffic periods of the day, permanent structures would take away valuable foot traffic space. While the setup/takedown does look arduous, I think this is a particularly good re-use of land that already has a day job.

That's an incredible amount of work each day- plus getting supplies, cleaning, accounting, and probably a hundred other things. Incredible- I wish them luck and I'd love to have lunch there!!

I wish here were food stalls like this where I live in Australia. I would eat there every day. It all looked amazing. The ladies worked very hard and deserve all the respect they receive. Awesome

屋台の移動と設置（組み立て）等の準備だけで相当時間を要すると思います。
閉店後の後片付けや洗いものに残飯の分別、英語での質問にありましたが、
屋台でも事業系ゴミとして個別に処理するのか、屋台でまとめて業者に依頼
しているのか気になるところですね。
また帰宅してからも翌日の仕込みもあるでしょうし、商品の発注や買い物
などの手間を考えると、遊んでいる暇などないと思います。
このような大変な仕事を笑顔でテキパキと熟すお二人には尊敬しかありません。
博多に行った際には今回見た美味しそうなメニューを是非味わってみたい
と思いました。お身体を大切に日々頑張ってください＾＾

Nice job by the video person. I have been watching with my mouth watering. When I was working, I frequently traveled to Japan and I miss it now I am retired.
--- I remember when Okayama had yatai scattered around downtown, but they are all long gone. Now if I want to eat at one, I have to hop on a train and go to another city, so it requires some planning. It's good that Fukuoka rethought their plan of getting rid of them and has instead encouraged their growth over the last 10 years or so.

日々、日本の良き文化の為にご苦労様です。
本当に素晴らしい仕事だと思いますし、正直初見で屋台入るのって敷居高い感じを受けますが、この店は雰囲気も柔らかく自然と入れるような空間なのがお客さんにとっては嬉しいのかな、と。
一つだけ気になったのは生ビールの注ぎ方ですね。泡は溢れさせて細かい泡にしてから切って頂きたいですね。見た目にもその方がお客さんからしたら満足度上がると思いました。

im so intrigued where do they put food waste special those waste that was left on the sink i know this is dumb question but can someone please elaborate on this "cleanliness" thingy once every food served , consumed and washed where do the food waste go???
It should be disposed of as commercial waste.
I'm curious about the dishes. They're using metal and glass. All that has to be washed between customers, which would require a fair amount of water. Are there water hookups, and a drain for the dirty water?

This could be the future of dining here in the US. Prices are climbing so high, so fast that I see food stalls becoming a reality. The old ways of doing things is not sustainable. Not just for dining but for workers. Instead of being crammed into high-rise offices, they might work in satellite offices are at home.

クレジットカードは使えるところはかなり少ないと思いますが、ペイペイとか楽天ペイが使えるところが増えてきましたね。
