I'd need a state tax license, a city tax license, and a permit to use my home for a business - then they dictate what percentage of the place can be used for said business (15%), and allow no business deliveries made to the address. Consider the mixed-use nature of this space. During high traffic periods of the day, permanent structures would take away valuable foot traffic space. While the setup/takedown does look arduous, I think this is a particularly good re-use of land that already has a day job.
They rent the location from that city. It includes water and electricity and they’re not allowed to set up or start until a designated time. It’s why they’re mobile. From the few that have stated they can’t start until like 5pm, and most are open fairly late. It’s kind of like going to the bar after work grabbing some food and having a beer or four. I’m sure the time’s varies by city though.
Definitely looks like a lot of hard work setting up and breaking down. Saw a video about twin sisters that had a stall usually at some store and they finally were able an open up a restaurant in a permanent location. I imagine the rent would be crazy expensive for a permanent location, not to mention the cost of utilities and the other fixed costs involved. Also the owners would have to hire more employees.
It looks amazing and the food looks so delicious. I wish to bw there and eat the food with good atmosphere and interacting the costumers too to feel the mood. Such a nice experience.❤

Now if I want to eat at one, I have to hop on a train and go to another city, so it requires some planning. It's good that Fukuoka rethought their plan of getting rid of them and has instead encouraged their growth over the last 10 years or so.

Normally, when I receive a recommendation from YT, I immediately go to the comment section to get a feel for what the video is about...but not this time. I was enthralled right away by the ingenious way they had set up their food stall and made it portable. And when the food preparation began my eyes were glued and I was getting hungry 😁! I really enjoyed hearing the joyful chatter of the patrons. I even thought I heard a "Ganbare!!", which to me says that they were thoroughly enjoying their food and the congenial atmosphere the operators had created. I live on the other side of the world, but I have a new wish... That is to one day be sitting and enjoying a delicious dish at this fine food stall. GANBARE!

Incredible atmosphere and friendly staff/ owner. I also wish we had these type of stalls in Australia. We have a Japanese restaurant near us but it doesn’t have the great variety as this stall nor the atmosphere. Great work. 👏👏👏👏🇦🇺🙏
The food all looks and sounds great!😅 What little I know of the food prices even I know that for what you are getting is still inexpensive as compared to American food and probably healthier as well. Wish we had good Japanese cuisine here in this American desert. Now I'm hungry and sad. Sigh. Great video.
I lived in Fukuoka for years and often went to yatais. There are some close by Tenjin station, but many more between Nakasu and Canal City along the river. Some in some other places. Often great to eat seafood, big shells etc. If someone is curious there are public toilettes very close by, very clean and free. And Nakasu is _not_ dangerous at any time a day or night. I recommend a visit to Fukuoka, mentaiko and other foods are fabulous including the very varied yakitori. The city is very clean and friendly. Plus you can take a fast ferry to Busan in Korea, 4 hours, an amazing city too.
You can really tell the difference between the brand new stalls and the ones that have been around for a while. All that shiny fancy new equipment. You can also tell the differences with a stall being bankrolled or not. This stall comes from money. Just look at the enormous staff working at a street stall compared to the others I have seen that are just one or two people. This is an entire high end restaurant disguised as a humble food cart. What fancy restaurant decided that they wanted to get in on the "food cart fad" that the young Internet kids are into?
Every dish these nice ladies serve is work of art. Looks and tastes good :) They actually serve alcohol drinks in the streets like this? Try doing THAT in the Americas here!

屋台の移動と設置(組み立て)等の準備だけで相当時間を要すると思います。
閉店後の後片付けや洗いものに残飯の分別、英語での質問にありましたが、
屋台でも事業系ゴミとして個別に処理するのか、屋台でまとめて業者に依頼
しているのか気になるところですね。
また帰宅してからも翌日の仕込みもあるでしょうし、商品の発注や買い物
などの手間を考えると、遊んでいる暇などないと思います。
このような大変な仕事を笑顔でテキパキと熟すお二人には尊敬しかありません。
博多に行った際には今回見た美味しそうなメニューを是非味わってみたい
