First, 99% of amateurs would never be able to hit the ball from Adam Scott's position at the top with flat shoulders/high left shoulder and such high, deep hands. More importantly though, the statement that "all pros are trying to keep their ear on that posture line" isn't even close. Most pros don't try to and don't come anywhere close to doing this. Pick a tour pro you like, watch their swing in slow-mo, and in almost every swing you will see their head lower some in the backswing and lower even more in the forward swing until just before impact. Adam Scott is an exception, definitely not the rule.
I'll speak on behalf of their organization as I've gone through their training. They're noting that there are several different methods and ways to swing, but the best swing for a person is based on what they can physically do. You're spot on in that most people do not have the ability to put, much less control, their body in Adam Scott's position. That being said, however one swings, the ability to maintain posture and control is important at impact. Their organization oversees 47 of the top 50 players in the world. Their reputation speaks for itself.
It's not for those people with back problems. If you don't suffer from back problems then posture is not important but what is important is (as the title says) to "maintain" that posture (however ugly it might be ) if you want to make consistent contact with the ball on the sweetspot of the clubface. There are of course some super athletes on tour that wobble all over the place and yet can play on tour but those are few and far between. Natalie Gulbis comes to mind

What you imply is that if you do not have an excellent body structure, you cannot make the correct body movements to swing the club well. Is that it?
