My layman theory about the body jerking as you're about to fall asleep is that with the eyes closed you aren't getting a ground truth about your position and velocity which allows any errors in your body's perception of acceleration to accumulate until your brain perceives dangerous motion. You see similar effects on VR controllers when they're relying on the accelerators for too long and are out of the camera's sight or with Wii controllers when they need recalibrating.
