    Great timing. I was just looking for a way to cook my 3 piece pork ribs from Costco. I'm not sure if my pitboss can handle all 3 at once. I may need to rotate their locations every hour or so. But 5 hours will to much for today. I will try this tomorrow.

      @@CookingwithManualFocus the smallest one. Best investment ever. On a Walmart trip I saw it in sale for 150 dollars. It doesn't hold temps well, and the actual temp always seems lower than the display temp. But I have a Meater probe and I set and forget. The Meater alerts me when the center hits the perfect temp. So far everything I have made turned out excellent. I did a whole turkey, duck, brisket (turned out a bit dry in the bottom because I put it in at 11pm, went to bed, got up and took it out at 9am.) It was excellent, except for the bottom dryness.

      What's up bro!!! I was looking at the prime rib you did the other day lol. Yes you sure can! The only thing is you may have to run either at 250˚ or 300˚. You may need to spritz if you decide 300˚. But still can definitely get good results. When they probe tender and about 196-198˚ you should be in the game!

    It’s crazy how much the membrane makes a difference lol

    • @CookingwithManualFocus
      @CookingwithManualFocus  4 месяца назад

      Very true! The glue that keeps them together. When smoking beef ribs because the meat is so close to the bone you have to keep it on or the meat as it renders would come off lol. Pork ribs are more forgiving with that membrane.

      On the old country they have the plate at the entry of the cool chamber do u have issues with briskets burning on the bottom?

    • @CookingwithManualFocus
      @CookingwithManualFocus  4 месяца назад

      I have not done a brisket yet on this one. But with the other longer smokes like pulled pork and turkey I havent had that issue. Also I normally smoke on the lower side 250-275. Also a water pan would help to keep humidity in the chamber and prevent the meat for scorching in some cases.
