Got my en Aubrac yesterday. Came super fast. The scratches on the blade are likely from the former owner trying to sharpen or touch up the blade on a ceramic kitchen sharpener. I’ve seen that before on highly polished blades where the person doing the sharpening isn’t careful and nicks the polished face on the stick. Not a second from factory. Cheers buddy. One more thing. My new Laguiole surprised me with a blade steel stamp 12C27MOD. Slightly less carbon. Oh and the thumbnail on my blade is also shallow. It will all depend on the person who makes the knife. You can almost tell just by the work who did it. Or check the blade signature lol.
Very nice knife! I love the Laguiloles. I have 2 of them, and will probably end up with more at some point. Great looking knives and such classics. Some of them are just drop dead gorgeous! One of mine is a custom made by a maker here in the US in damascus steel and blue camel bone, the other is a French made in 12C27 with what looks like snakewood covers, but I got it free as a tag along from another purchase, so I really don't know much about it other than the tang stamp says the steel and France on it, and the blade is marked Laguiole with a mirror finish.. Both are beautiful in my eyes, and I've enjoyed them, but they are nothing compared to some I've seen. You're right about being a finger print magnet, at least on the 12C27 one, lol. It's pretty much impossible to open it without leaving a print.

First it is called a mouche or fly , the guillochage made it a bee ,the shape of the Laguiole represents a womans calf ,the original Laguioles were straight blades of cabon steel used by sheep and cow hearders , these new models have nothing to do with the originals nor is the Name Laguiole a trademark

That is not for knots it's for piercing the gut of a sheep when it develops bloat.
