    If you soak your wheat berries overnight in water, you can reduce the cooking time significantly. I do this when I make brown rice because I find it takes so much longer to cook compared to white rice 😊

      ​@ArdentMichelle Soaking is another level of food preparation we lost to industrialization. There are some important nutritional reasons for soaking grains, seeds, and legumes. Lots of information is available online that wasn't easy to find when I grew up in the 60s. Then I learned about soaking and sprouting. It increases the nutritional availability in most whole foods.

      @ArdentMichelle My google searches on the subject often start with "why soak" and the food in question. I especially like to understand the history of any food and the traditional preparation techniques that were tested over many centuries rather than just the past 100 years. Please forgive my longwinded examples as I am an old lady with a passion for traditional foods from all over the world. I am sure your reading will provide more ideas and I always enjoy watching your clearly presented cooking techniques.
      Some examples in history were the Europeans who skipped nixtamalization when adopting maize into their diet and would suffer from pellegra. This is still a problem in parts of the world and was a big problem in the rural South as recently as a hundred years ago due to the loss of traditional food preparation techniques.
      My grandmother, born in 1898, always soaked her beans overnight before cooking and was horrified when someone suggested baking soda to speed up the process of cooking unsoaked beans. The goal of soaking beans is to remove or inactivate any seed toxins meant to protect the seeds from predation by birds and animals. Soaking to the point of germination also unlocks nutrition that is used by seedlings to grow into plants that can supply their own nutritional needs. The shortcut methods don't unlock any nutrition and contribute to bean flatulence. So a big pot of dried navy beans from my garden are undergoing their soaking transformation in the kitchen. In the morning, I'll cook them in my Instant Pot and use them in several recipes. Ham bone soup or a ground sausage soup are favorites that stretch meat. White bean hummus is delightful in a lentil wrap with fresh chopped tomatoes and green onions. Cooked white beans go in our red, white, and blue three bean chili, along with kidney beans (red) and black beans (kind of blue). Then there are the masa tortillas eaten with the chili. Masa is nixtal from maize or corn. Going full circle here with my longwinded examples. 😉 Food history is an adventure in nutrition!

    Wonderful video! Thank you! As a single senior on Social Security I need to cut corners. For the next month I plan to eat out of my pantry and focus on single servings. This video has taught me how to portion down to one serving. I have watched your channel before not focused on one day budget meals.     Kushari is an Egyptian dish made with rice, lentils, elbow pasta, garlic, onions, and a spicy tomato sauce (made with one small can of tomato sauce). VERY economical and SO delicious. Based on your videos, I think you will LOVE it.

    You can make vegan Bolognese with the wheat berrys, just plus them in the food Prozessor just 1 or 2 pulses. To break them up a little bit. Then fry some onion and garlic. Add the wheat berrys Tomato paste. Fry for a minute or so. Add water, salt , pepper , Oregano, thyme , chilli. Cook for 45min add some crushed tomatos and cook for another 15min

      Can you cook this in an instapot? Because in the Uk that long cooking the pot would cost more than the food in it!! (Yes, our energy is a mess over here)

    A favorite fall meal I love is farro ( wheat berries) with roasted butternut squash, dried cranberries, pumpkin seeds with a bit of lemon juice and chopped sage! Love to see you trying new ingredients! There’s so many wonderful whole foods out there!😀

    I like how you add colour to your dishes when you can. Like throwing in some chopped tomatoes or green beans in an otherwise brown meal. We eat with our eyes too and that extra detail can elevate a budget meal and make it more enjoyable.

    Great ideas ,well presented. I pressure cook wheat berries then freeze them in ice cube trays. Once frozen, I store them in a plastic freezer box. They last a long while. I add them to pasta sauce and soup. They are a good substitute for meat.

      Hi Sara 😁 I love this idea because the ice cube trays are the perfect size. Then you can just add in 2-3 blocks to what you're cooking. I was surprised that you don't need a lot for the added texture. Great idea 👍

      They are not a complete protein, they are no where near the protein, they have no fat and little iron
      Not a good meat sub except for giving some texture to the soup

      If they do not meet your standards, then of course do not use them. I was simply adding to the conversation as I am sure you are. In friendship I write that as a vegetarian of 40 plus years, and now vegan of 10 plus years, I have an understanding of where protein is food wise. In the spirit of budgetmindedness I offered a suggestion. Perhaps you might enjoy your wheat berries sprouted as they provide more protein once sprouted.

    You really outdid yourself this time! Great looking meals, and I was thrilled to see the use of the wheat berries…I bought a case of them (6 #10 cans) thinking I’d make my own flour if things really went sideways, and I have seen Jinne Killer from Homestead Corner use them in a stir fry. It’s great to see other uses for them, and they look really tasty. You really have a gift for making so much for so little.

      @@ArdentMichelle yes, we are still doing the Boston run, 6 hours each way. It’s so kind of you to remember and ask. You really are something special!❤️Spending 4 days a week there, getting there, or getting home from there. She’s doing well but it is kind of a grind. I’ve condensed my work week into 2 twelve hour shifts each week, which gives me just a few hours at home on each end of the Boston run. We are expecting a severe winter storm this week so I’m staying home and sending Jon on his own so that I can be here for our horses and our chickens and geese. I’m almost afraid to see what kind of a mess the two of them will leave me to clean up next week!

      @@ArdentMichelle I use them in hot cereals with apple and walnuts. I also use as fillers in chili, stuffed spaghetti squash, curries and even in to bulk up salads. I add just groats in yogurt with chia seeds and/or millet. I like using it also with barley in soups.

    Best vid I've seen from anyone in ages. I liked that you tried to get healthy foods for your $1 as a lot of the budget channels rely on processed meat like a giant sausage and stuff like that, which I don't think is good. I also liked that the things looked simple to make.

    I'm so glad you are trying these alternative grains. My sister found a vegan recipe for zucchini brownies that used oatmeal instead of flour -- amazingly good. I recently learned that I'm allergic to wheat to go along with my lactose intolerance. I love your cooking because it's adventurous without being fussy or foody.

    I remember a hot cracked wheat cereal my mom would make when we were young. I'm wondering if that was similar to your wheat berries. The crunchy lentils sound like a great snack and your viewers had great suggestions for recipes to try. Did recently make lentil tacos 🌮 my husband loved them. Used bacon dripping , beef bullion and taco seasoning . Thanks for all the creative frugal recipes.

    Quick note about wheat berries - eating a bunch of wheat berries if you’ve never had them before can make some people have horrible stomach pains. It might be beneficial to start with small quantities if you have digestive issues and see how you react.
    You can also make them easier to digest by soaking them like beans, or by sprouting them. Sprouted wheat berries are a bit sweeter, too.

    A couple years ago I stumbled on a website that had a proportion chart for water to grain and recommended cooking times. I don't remember the site but I'm sure you could find it easily. I do remember that grits/polenta/corn meal was a 3 to 1 (up to 4 to 1 if desired) while wheat berries (soak overnight and drain) was 2 to 1.

    When I was growing up, my mom would make wheat berries in the slow cooker for us to eat for breakfast. She'd start them the night before with lots of extra water and a little salt, and we'd eat them in the morning (drained of any extra water) with a little butter and honey. It was inexpensive, wholesome, nutritious and would keep us full until lunch.

    Soak the wheat berries overnight and then put them in your pressure cooker. This would make it quicker. The channa dhal also needs to be soaked before it is cooked.

      Hello 😁 I definitely think he instant (pressure cooker) would make cooking the wheat berries much quicker. These were not split chickpeas but split regular peas. I believe the yellow split peas I used might be the same as toor dal, but I'm not positive.

      No, Toor dhal cooks a bit faster than Channa dhal. But all of the dhals, cook much faster in a pressure cooker. Wheat berries are used in a Pakistani Haleem. Which is a one-pot meal in itself? Ardent I am Sri Lanken and I hope you try some of our Sri Lankan dishes on your channel. We have a variation of cunjee that you may like. We also have some great vegan dishes that are cheap and easy to cook.

    These are some great ideas for adding texture and more flavor to basic ingredients. I'm going to try crisping up some of my lentils, chickpeas, and beans when I next cook some batches (like today!).
    I like to cook and dehydrate some of these legumes to make quick meals in a pinch. Crisping them up with extra flavoring sounds like an interesting way to add to soups or just as a snack.
    I picked up a #10 can of baked beans for ten cents at a yard sale. We don't like canned baked beans that much, but I'll bet they make a nice crispy topping on something if I dehydrate them a bit or crisp them up. We plan to share some of this bounty with friends who love baked beans. Nothing wasted!

    What fantastic choices you made for this video! I’d have eaten every meal without reservation. Wonder if the wheat berries would have cooked overnight in a crockpot, although I think another commenter had the answer with soaking.
    I wish we could send you to 2000 when your dollar would have bought so much more. What choices you’d have had then, I wonder.
    I’d like to see you do a challenge with a deeper pantry. I know you are just using minimal additions to suit the theme but I’d love to see a challenge adding things like cornstarch, a spoon of peanut butter, a packet of ketchup or mustard, some honey, baking powder, things people might plausibly have around that could extend the reach of recipes. Just an idea.

I can't believe it, I have been switching rooms around in my home all week and today I decided to make a snack because I was hungry and wanted to make something really quick so I could get back at it.. So I made some of chips from the corn tortillas that you always make, I still have a lot of the black bean dip from Sam's. I sat down to eat it and turned on RUclips and there you were with a new video! Life can't get better than that!

      @@ArdentMichelle Yes, it was jalapeno bean dip, it had some chopped jalapenos in the center. They had the "grazing" booths out and one guy was giving samples. It was delicious so I had to get one. Yes! If you buy it maybe you can replicate it! 🤩 Have you ever made it? I am going to try that in my toaster oven! Thanks for the tip.
      lol, I don't like moving anything around in my home. Where I put it that's where it stays. But I have a friend that does that all the time. I have an online store in my home and it outgrew the room I had it in. So I'm switching to a larger room. So much work! I've been working on it all week. Now I'm going to have all that bedroom stuff in my living room and dining room for a few days because I'm remodeling the now nearly empty room.

    If you soak the wheat grain overnight, the way you would with dried beans, and then simmer the soaked grain in a fresh batch of water, the cooking should take about 40 minutes on the stove top. Or you could cook a larger batch of soaked wheat grain in a slow cooker. Cooked whole grain wheat can be very chewy and tough for many people to digest.
    If you take some whole grain wheat that has not been soaked overnight and very coarsely grind it so each grain in broken into two or three pieces, it will not take as long to soften when simmering it in water compared to whole grains that have not been soaked overnight. Again, this cooked wheat grain can be quite chewy and tough for some people to digest.
    I would do a half and half mixture of cooked wheat grain and cooked white rice or barley (add the raw rice or barley plus extra water about 20 minutes before the wheat grain is tender). This would make the grain dish less chewy and easier to digest, especially for those not used to eating cooked wheat grain.
    For fresh raw veggies that are affordable, I would choose a whole head of cabbage and a handful of the large, ugly kinds of carrots used for juicing. You can make a vitamin-rich raw salad of shredded cabbage and shredded unpeeled carrots tossed with a homemade oil and vinegar dressing. This would add extra vitamins to a diet based on whole grains and dried legumes. Or you could sprout some of the wheat grain until it has green shoots and use raw as a vitamin-rich salad ingredient.

    Have you considered using dried figs in your cooking? If you haven't tried it, fig jam on pork it's a taste sensation. I use it on toast as well. Eating a dried fig as a treat is equally yummy.
    Unfortunately fig jam is outrageously expensive ($8+ for a few ounces) but if made from scratch costs pennies and is so easy to make because a "wheel" of sundried figs has about 25 figs which gives me a lot of options for their use.

      So funny that you mention that. I've been considering using them as a sugar substitute. I picked up the Medjool dates in Samsclub yesterday but I put them back because it was $7.98 that I didn't "need" to spend. But I told myself I'll get them on the next trip. Hmm.....fig jam on pork 🤔
      I need to investigate this further.😂 I bet that's great. Do you put your figs in the refrigerator? I would probably be the only one in my family eating them.

      No I don't refrigerate them because they're shelf stable & I think they would be too hard if cold. I like chopping one up and adding it to the water when I make oatmeal so it gets nice and soft.

    For the wheatberry porridge, I would have added a half teaspoon of soy sauce, and a half teaspoon of pure maple syrup. It would take the sweet-savory flavor to another level. Great recipes! 🙂🙂💕💕💕💯💯

    Wheat berries can be made in a rice cooker in 70 minutes. You can also soak them in boiling water with a lid on overnight. The next morning they will be ready much faster. Lovely with honey.

    Wheat Berry Salad recipe I use:
    1 c hard red wheat berries, rinsed
    water
    2 (15 oz.) cans navy or great northern beans, rinsed and drained
    ½ a large red onion, chopped
    1 c diced celery
    1 c diced tomato
    Vinaigrette:
    1/3 c olive oil
    2 T red wine vinegar
    Juice of ½ a lemon
    1 T Dijon or honey mustard (I use Dijon, but add some honey to the salad.)
    1 T minced garlic
    ½ bunch parsley, chopped
    freshly ground black pepper
    Bring first 3 ingredients to a boil and simmer 70 minutes, drain. (If you are using soft white wheat berries, simmer only 60 minutes.)
    Mix vinaigrette by combining ingredients with a whisk or in a blender.
    Combine all ingredients, mix well, and chill.
    You can also use farro, but adjust the cooking time per farro package instructions.
    You could also use Weat Berries in this Farro Salad recipe: Combine all ingredients.
    1 package of Trader Joe's Quick Farro, cooked 10 min. and cooled
    1 15.5 oz. can of chickpeas, drained and rinsed
    some fresh or frozen corn
    1 red pepper, chopped
    some red onion, diced
    salt and pepper
    finely chopped fresh basil
    some cider vinegar
    a little olive oil

    I work at keeping my food consumption to under a dollar a day which is normal for my tiny budget. I have to bulk purchase and spread ingredients out over several meals which is the hard part.
    I start with the cheap LaModerna pasta which is 48 cents a package right now. I stocked up when it was 24 cents a package. I use a basic tomato sauce for around 50 cents a can. I use half of the package of pasta with one small can of basic tomato sauce. I add things like dehydrated minced onions and other spices. Sometimes I find ground sausage for 99 cents for a one pound roll on a clearance rack so I stock up at that time.
    A certain large grocery store chain has been shutting down different locations for a month to remodel them. I watch for the announcement of when they are going to close for a month and go shopping as they clear out everything for rock bottom prices. I was able to get 4 pound to 10 pound bags of assorted chicken for just 99 cents a bag. I purchased 4 of those bulk bags each sale and budgeted them out for the year. I still have 2 bags of legs and 2 bags of quarters from the last sale. There are 24 chicken legs per bag. And it comes out to 12 chicken quarters per bag which is around 24 pieces by the time I cut them in half. It comes to 4 cents for just one piece of chicken.
    Bouillon cubes have been on clearance for 30 cents for a box of 8 cubes because of package changes. I went a little overboard stocking up. It is about 4 cents a cube because I stocked up. One bouillon cube dissolved in 2 cups of boiling water makes a cheap soup broth. I paid $10 for these big canisters of different dehydrated vegetables. I get about 100 scoops per canister which is 1 cent a scoop. I add other ingredients from my pantry based on whether I add pasta or meat. I keep my batch of soup at 15 cents per serving.
    Since I fell in December 2021, I have had to live off of what I stored in my pantry for much of 2022.
    I have to be careful with what I purchase and what I eat. I have to plan on little to no food waste.
    Here lately I have been getting free bratwurst. It is abundant in my area and nobody wants it so I volunteer to take it. It is frozen and well before the best by date. For the month of February I had to process and make meals with 33 pounds of bratwurst. I cut some out of the casing and used it as ground sausage.

    Michelle ... I really love oat groats! I cook them up in the rice cooker or in a pot and sometimes cook them with a small amount of wild rice (which is quite expensive, so the oat groats "pad them out!" And you get that delicious, nutty taste of wild rice at a much lower cost) --- you can also use them in soups and other dishes.
    They make a great addition to a salad ... I love a vinaigrette dressing mixed with some cooked, diced sweet potatoes, oat groats and wild rice, and whatever else you want to add.

    Oh my goodness I am so jealous for how amazing your bulk sections are. Where I live, they simply don't sell any of the cheaper items bulk at all. Most of the bulk section goes to nuts, trail mix and granola. But even where you have things for 1.18, where I live it costs almost twice as much.

If I didn't still have a savings left, it would be so awful because FoodStamps only give $2 per day and that is hard to live on without bulk bins.

      I wish you did too. 😞 It's such a blessing. I'm going to be looking for more bulk sections at ethnic stores. I've found 2 stores nearby that do that but wondering about some other places.

    Oh wow! Thank you for the wheat berry ideas! I’ve been wondering about them. I cannot find them in bulk where I live but I travel at least once a month to a store where I can get them. I’m so excited to see that they are only around 30 on the glycemic index.

      Hi Penny 😁 Glad this video is inspiring you to try new things. I've been trying to eat more of the lower glycemic foods. I wish I could find a good site, because a lot of sites have conflicting information and some don't have all the foods. Do you know of a good place to get this info?

      @@ArdentMichelle you are so right about the conflicting information out there. I’ve struggled with my diabetes lately and so I am trying to go “whole foods” and strictly limit as much processed foods as possible. I haven’t found one really good source yet but if/when I do I will definitely share it. I have found that both figs and dates have been like sweet heaven in preparations like your video. I always avoided them but cutting out all the refined sugars, I find them so satisfying and don’t spike my sugar numbers. I detest almond milk (love raw almonds) so I am going to try Oat milk.

    You can make a Mauritian street food dish called Gateaux Piments with the yellow split peas, they are eaten with green chilli paste and very tasty.

    If you have a wide mouth thermos, you can add boiling water to your wheat berries the night before, and your berries will be all ready for breakfast the next morning.

    You did a fantastic job making your dollar stretch ..I would have had to use the instant pot to cook the berry wheat an hour on. The electric would be very expensive in U.K. the atomic shrimp who does similar to you has upped his budget here as a pound couldn’t get him anything to make 3. Meals now ,thank you for your share .x

    The chewiness of wheatberries is so satisfying. I also enjoy farro which has a similar texture. The protein content also makes them a nutritious option! I like to make a one pan dish, and I'll stir in some tomatoes, peas, spinach or arugula, garbanzo beans and goat cheese. So tasty!

      @@ArdentMichelle I'll make it with either/or. I would say farro gets more chewy, but wheatberries keep their "bite." To be honest, I always thought they were the same thing?

    Really enjoyed this video. We eat meat, but I am definitely going to buy wheatberries and try them in a breakfast cereal and probably will add some in a meat dish (meatloaf or taco meat) for the added nutrition. Thank you.

      I was thinking about how I always wanted to go to this date farm in Palm Springs where they sell these famous date shakes. I just never got around to it. I've been drinking protein shakes with berries and probiotics lately and I was thinking I could recreate the date shake 😂 I was going to purchase dates at Samsclub but held off to save money. I plan to get them next time. I love the idea of using them instead of sugar. 🤔

    I have food sensitivity with wheat and pea family things. I didn't always struggle so much with food and miss peas (especially chickpeas), But still you gave me some good hints about what I could do with foods I can have.

    I would cook the wheat berries in a slow cooker (with lots of water) and I would also serve with an oil: olive, avocado or coconut...dts/usa

      yeah I thought about serving it in a salad with oil and vinegar but I'm trying to cut down on oil. That would be great though 👍
