I’ve cooked professionally my whole life and I’ve always thought the mark of a good chef is someone who can take nothing and turn it into something wether they’re cooking in a restaurant, at home, on a boat, or in this case in jail. He took that salmon from disgusting to looking BOMB. RIP to a legend.
I make canned salmon all the time in my toaster thanks to this video. It's so cheap and really good. Much cheaper than frozen even if you buy the cans of wild caught. You have a lot of wiggle room seasoning this plus you can keep the bones in a freezer bag to make soup stock with other scraps from the kitchen
I like canned salmon. There was another type of fish that was sold in prison that was canned, but it was cheaper. I forget the type of fish, but if you cleaned it really good, you could work with it. People would call the other fish "bait fish". I can't remember tho

Depending on the lid color will depend the extra things it has. The red lid Adobo has pepper already, so technically you don’t need to add pepper as well. Sazon is also very salty and it will add nice color bc of the anato seed it has on it.
